A handful of fresh blackberries are boiled in a few cups with a cup of sugar and 100 ml of cold water, then left to cool well, even put in the refrigerator for 10-15 minutes.
Cut 7-8 biscuits into 2 equal halves, then with a sharp knife we cut them, each half long and with these thin halves we decorate the edge of the shape, placing them next to each other. The remaining pieces are crushed with the help of a robot, then mixed with melted chocolate in a bain marie together with 2 tablespoons of whipped cream. Mix well with a spoon then pour the mixture into the mold and press lightly with the back of the spoon, until you get a uniform and well-pressed layer.
Mix the whipped cream well, then add the cheese, mix, then add the blackberry syrup, add the hydrated gelatin in 100 ml of cold water and then melt in a bain marie. Pour the mixture into the mold, decorate with a biscuit, a few fresh blackberries and pour the syrup, in a thin thread, over the biscuits that decorate the edge of the cake. Let it cool for an hour then serve cold!
