METHOD OF PREPARATION
1. Wash the peaches. Cut them in half and remove the seeds. Arrange the peaches in a bowl and pour boiling water. Leave the fruit in hot water for 2 minutes.
2. Drain the water from the bowl, then pour cold water. Peel a squash, grate it and sprinkle with vanilla sugar. Leave them at room temperature for 20 minutes. Cut them into slices.

Cream: 1 kg mascarpone, 100 ml liquid cream, 2 teaspoons natural almond essence, 10 tablespoons powdered sugar
For the top, melt the butter and leave to cool. Mix in a large bowl the flour, almonds, baking powder, baking soda, cocoa and salt.
Separately, beat the beaten eggs with the sugar and vanilla, until they triple in volume, about 12 minutes. Lightly add the butter and cream and mix for another minute.
Gradually add over the flour and almond mix and mix gently with a spatula (not a mixer). Preheat the oven to 175 degrees. Line 2 cake trays (23 cm in diameter) with butter and flour. Divide the composition into trays and bake for 40-45 minutes.
After 30 minutes, they can be reversed, depending on the oven. Leave to cool in the oven with the door open for 30 minutes, then remove. They are ready to decorate when they have cooled completely.
The pears are peeled.
Place in a saucepan with the rest of the ingredients, then add enough water to cover the pears. Leave it on the fire for about 25-30 minutes, until they become tender. When the pears have cooled, keep 2 for garnish, and slice the rest thinly.
