Cooking ribs in the oven:
Step 1: prepare the ribs.
First of all, we take the right amount of fresh beef ribs, thoroughly rinse them under a stream of cold running water and dry them with paper kitchen towels. Then put on a cutting board and cut off the membrane from them. As a rule, it is located in the lower part, on the side of the bones; if left, it will be difficult to chew the meat.
Then we act at will, either chop the ribs across into segments, leaving about one to three costal bones in each serving, or save them in a whole piece or cut it into 2 parts, it all depends on your desire. Then we rub them to taste with salt, black pepper and send into a deep bowl on 15-20 minutes.
Step 2: prepare the oven and pan.
Meanwhile, turn on and preheat the oven up to 220 degrees Celsius. Then we cover the non-stick baking sheet with a sheet of aluminum food foil, put a metal grid on it and proceed to the next step.
Step 3: fry the ribs.
We put a deep frying pan on medium heat and pour 2-3 tablespoons of vegetable oil into it. When it is very hot, take turns to lay the prepared ribs there and fry on all sides until golden. It is not necessary to bring them to full readiness, we simply brown in oil until a dense crust appears on the surface, it will help preserve meat juice during baking. After that, we put the ribs on a large flat dish and start cooking the sauce.
Step 4: prepare honey and cream sauce.
In place of the pan we put a small stewpan and melt a piece of butter in it. After 2-3 minutes pour in soy sauce, put honey and mustard. On medium heat we bring everything to a boil, pour in the resulting rosemary sauce, boil it for a couple of minutes, remove from the stove and allow to cool slightly.
Step 5: prepare the ribs for baking.
Then, using a baking brush, coat the slightly salted ribs with a thick layer of honey-cream sauce. We do not miss a single place, so that the aromatic mixture covers the meat from all sides. After that, send the ribs to the prepared pan.
Step 6: bake the ribs in the oven.
Then we put the still raw dish in the preheated oven on 35-40 minutes. Intervally at intervals water the ribs every 10 minutes the remaining sauce. After the required time, with a kitchen knife, make a small incision near the bone on one of the pieces.
If the meat is red in this place, we bake it, and if it is pink and droplets of almost transparent fat flow out from there, with the help of kitchen taps we rearrange the pan on a cutting board previously laid on the kitchen table, let the ribs stand in this form 2-3 minutes and serve.
Step 7: Serve the ribs in the oven.
Ribs in the oven - always tasty and satisfying. After baking, they are allowed to stand in the pan for some time, and then act on the basis of the situation. If the ribs are baked in one piece, it is cut into segments, and if in ready-made portions of 1-3 pieces, then immediately spread it on a large flat dish and serve it on the table. As a side dish for this dish, you can offer boiled rice, pasta, mashed potatoes, pickles, jacket potatoes, a salad of fresh vegetables and, of course, fresh bread. Enjoy a delicious and simple meal!
