Asian slaw, peanut sauce and rice noodles make this chicken breast recipe an absolute winner any night of the week. Flattening out the breast is a great way to cut the cooking time and helps get this dish on the table in under 20 minutes.

One Pot Wonder Here-Garlic Whole Chicken

Nothing says home cooking like a whole chicken simmering in the slow cooker all day! So many options you can add on the side but throw this in your crockpot or instant pot (and use the slow cooker option) and you’ll be so glad you did when it’s time for dinner!

  • 2 carrots cut into chunks (optional)
  • 2 celery stalks
  • 1 small onion
  • 1 whole chicken about 4 – 5 lbs.
  • 1 lemon halved
  • 3 – 4 cloves garlic
  • 1 tablespoon herbes de Provence
  • sea salt and freshly ground pepper to taste


  1. Cut carrots, celery, and onion into large chunks and line bottom of the slow cooker.
  2. Rinse chicken, pat dry, and stuff with garlic cloves and lemon halves. Season all over with salt, pepper, and herbes de Provence.
  3. Place chicken on top of vegetables in the slow cooker. Cover and cook on low for 6 – 8 hours, or until chicken is 165 degrees.
  4. Optional: if desired, brown chicken under the broiler.
  5. Enjoy!

Luckily, these recipes using rotisserie chicken will get dinner on the table in record time. Using store-bought cooked chicken is a grocery store hack we can always get behind. Sure, there are certain occasions&mdashholidays or long weekends&mdashthat call for spending hours making scratch-made whole roasted chicken. But then there are days when you have kids to pick up from school, errands to run, work to do, and a million other things on your plate. There just isn&rsquot time for a fancy or complicated meal. That&rsquos where these quick family meals come in handy. Transforming rotisserie chicken into multiple weeknight dinners will save you time and money, but it&rsquos also a great way to get creative in the kitchen.

Whether it&rsquos last night&rsquos roast or a rotisserie from the supermarket, there are tons of ways to use leftover chicken&mdashfrom comforting, easy casseroles and soups to fresh salads and hearty pasta dishes. You&rsquoll never be in a dinner rut again with flavor-packed dishes like spicy chicken quesadillas or buffalo chicken baked potatoes. Even the time-consuming recipes, like classic chicken pot pie, can be transformed into a quick weeknight dinner when you use the rotisserie chicken shortcut. If you&rsquore looking for something on the lighter side, try adding shredded rotisserie chicken to a Cobb salad or Caesar wrap for a filling lunch or dinner. Or take a cue from Ree Drummond and make one of her family-favorites: chicken spaghetti. It&rsquos a &ldquotrue go-to recipe.&rdquo

Recipe Summary

  • 2 tablespoons olive oil
  • 4 red potatoes, cut into large cubes
  • 1 (16 ounce) package carrots, cut diagonally into bite-size pieces
  • 1 stalk celery, cut diagonally into bite-size pieces
  • 1 sweet onion, sliced - divided
  • 1 (4.5 pound) whole chicken
  • salt and ground black pepper to taste
  • garlic powder, or to taste
  • ½ cup cubed margarine, divided
  • 1 large lemon, sliced
  • 1 teaspoon minced garlic
  • 1 stalk celery, cut into 3 pieces
  • 1 ⅔ tablespoons minced garlic

Preheat oven to 385 degrees F (196 degrees C).

Pour olive oil into a large bowl toss potatoes, carrots, bite-size pieces of celery, and 3/4 of the sliced onion in the oil to coat. Set remaining onion aside. Transfer oiled vegetables to a large cast iron skillet.

Rinse chicken and pat thoroughly dry with paper towels. Generously season the chicken, inside and out, with salt, black pepper, and garlic powder. Place the remaining 1/4 of the sliced onion, 1/4 cup margarine, lemon slices, 1 teaspoon minced garlic, and large pieces of celery into the cavity of the chicken.

Place the chicken atop the oiled vegetables scatter remaining 1/4 cup of margarine pieces and 1 2/3 tablespoon minced garlic in small amounts around the vegetables.

Roast chicken and vegetables in the preheated oven until the skin is browned and crisp, the vegetables are tender, and an instant-read meat thermometer inserted into the thickest part of a thigh reads 165 degrees F (75 degrees C), about 1 hour and 45 minutes. Let chicken rest for 10 minutes before carving and serving with vegetables.

Recipe Summary

  • 2 pounds tomatillos (husks removed), washed and halved
  • 1 tablespoon vegetable oil
  • 1 whole chicken (3 to 4 pounds), cut into 10 pieces (wings reserved for another use)
  • Coarse salt and ground pepper
  • 2 jalapenos, chopped
  • 1/2 medium white onion, chopped
  • 3 garlic cloves, finely chopped
  • 1 can (15 ounces) hominy (optional), drained
  • 1/4 cup chopped fresh cilantro

In a food processor, puree tomatillos set aside. In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper and add to pot, skin side down. Cook until browned on one side, 6 minutes. Transfer to a plate.

Add jalapenos and onion to pot and cook, stirring frequently, until slightly softened, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in tomatillo puree and hominy, if using season with salt and pepper. Nestle chicken, skin side up, in sauce. Cover pot simmer until chicken is cooked through, 22 to 25 minutes. Stir in cilantro season with salt and pepper.

What do you need to make roasted chicken?

  • Chicken: You’ll need a whole bird with the neck and giblets removed. You can use anything from a 3 ½ pound to 4 ½ pound chicken for this recipe. Just keep in mind that the 4 ½ pounds will take a little over an hour to roast.
  • Lemon: one lemon cut in half and stuffed inside the chicken lends a delicious lemony scent
  • Head of garlic: garlic adds flavor and acts as an aromatic. This makes the whole house smell so delicious!
  • Fresh herbs: fresh herbs are used in a couple of ways. The first is to stuff inside the chicken while it roasts. The other is sprinkled on top to flavor the chicken. I’m using thyme, rosemary, and parsley inside the chicken and sprinkling a few thyme leaves on top to flavor the skin.
  • Butter: Melted butter is used to baste the chicken while it roasts. It helps the chicken develop that delicious looking brown crust when the milk solids on the butter roast up.
  • Lemon pepper seasoning: a sprinkle of lemon pepper is added to the chicken so that it has that delicious flavor on the skin.
