Cooking fried potatoes with garlic:

Step 1: prepare the potatoes.


First of all, we put on a strong fire a pan filled with half-purified water, and bring the liquid to a boil. At the same time, we take medium-sized potatoes and thoroughly with a hard kitchen brush, rinse it under a stream of cold running water from sand and any other contaminants.

Then we spread the vegetable on a cutting board and, without removing the peel, cut each tuber into slices or slices of arbitrary shape with a thickness from 1.5 to 2 centimeters. We shift the slices into a deep bowl and proceed to the next step.

Step 2: boil the potatoes.


When the water boils, reduce the temperature of the stove to an average level, carefully put the chopped potatoes in the pan, add some salt there and cook the vegetable 10 minutes, it should become soft, but not boil down!

Meanwhile, put the pan on medium heat, put a small piece of butter in it and pour in the vegetable oil.

Next, pour the right amount of Provence herbs and black pepper into a small mortar. Grind the spices with a pestle until smooth and set aside, they will come in handy later.

Step 4: prepare the fried potatoes with garlic.


About after 3 - 4 minutes the oil mixture warms up well, carefully transfer the slightly dried potatoes into the pan, put the garlic cloves in the pan and increase the temperature of the plate to a level between medium and large. Fry vegetable slices from all sides to a light golden color for 5 minutes.

Then add the lemon zest to the pan and continue to fry the potatoes for 10 minutes until golden brown, periodically turning from side to side with a kitchen spatula.
