Apricot Curd Cake

Ingredients for making curd cake with apricots.

For the test:

Cooking cottage cheese pie with apricots:

Step 1: prepare the butter for the dough.

We spread the butter on a cutting board and use a knife to cut into small pieces. After that, we move them into a free saucer and leave them aside for a while. The oil should reach a mild state.

Step 2: prepare the flour.

Pour the flour into a sieve and sift it into a small bowl. This process will allow the component to be saturated with oxygen, which, in turn, will make the dough more airy and tender, as well as eliminate lumps.

Step 3: prepare the dough.

Slices of butter in a medium bowl. Pour sugar here. Using a blender or mixer, mix the ingredients at medium speed until a homogeneous mass is formed.

After that, we break the egg into the container, pour the milk and whisk everything again until smooth. Now gradually pour the flour and mix everything with clean hands in parallel. Knead the dough until it becomes dense and uniform. Attention: if it’s more convenient for you to work on a flat surface, then put the mixture on a kitchen table, crushed with a little flour. At the end, we form a ball from the dough, put it back into the container and wrap it with cling film. We put in the refrigerator to insist not less than 60 minutes.

Step 4: prepare the curd mass.

Put cottage cheese, sour cream in a deep bowl and pour out vanilla and regular sugar. Beat everything with a blender at medium speed until the mass becomes uniform in consistency.

Step 5: prepare the curd filling.

Pour corn starch into a bowl with cottage cheese and mix everything with a blender. In the end, break the egg and beat everything again with improvised equipment. Everything, liquid filling is ready!

Step 6: prepare the apricots.

We spread the canned apricots on a cutting board and, using a knife, if necessary, cut in half, remove the skin and bone. Pieces of fruit are placed on a clean plate.

Step 7: prepare the curd cake with apricots.

We take the dough out of the refrigerator and put it on the kitchen table, crushed with a small amount of flour. Using a rolling pin, we roll the ball into a flat cake. Attention: the dough layer may exceed the diameter of the baking dish 3-5 centimeters.
After that, we shift the cake into the container and level it with your fingers so that the sides form.

Pour the curd filling onto the dough and level it with a tablespoon. At the end, spread the halves of the apricots with the convex side up, slightly pressing them into the liquid mass.
Meanwhile, preheat the oven to a temperature 190 ° C. We put in it a form with a cake and bake it for 40-50 minutes until a golden crust appears on the surface. Immediately after that we turn off the oven, and we get the pastries from there with the help of kitchen gloves and set aside to cool to a warm state.

Step 8: serve the cottage cheese pie with apricots.

Cheese cake with apricots is tender and very fragrant. We shift the slightly cooled pastries onto a flat dish, cut into portioned pieces and serve with tea or coffee to the dessert table.

Recipe Tips:

- Instead of canned apricots, you can put fresh in the filling. To do this, pour fruit over with boiling water, so that afterwards you can easily remove the skin from them. Also cut apricots in half and remove the stone;

- so that the dough does not burn, the baking dish can be covered with parchment and greased with a small piece of margarine;

- in the liquid filling, you can add curd instead of cottage cheese, because the taste will not change from this.
