Braised Red Cabbage


Ingredients for Cooking Braised Red Cabbage

  1. Red cabbage 1.5 kilograms
  2. Smoked bacon 200 grams
  3. Onion 1 piece (large)
  4. Vinegar to taste
  5. Sugar to taste
  6. Salt to taste
  7. Ground pepper to taste

Saucepan, frying pan, kitchen knife, cutting board, spatula, tablespoon.

Cooking Braised Red Cabbage:

Step 1: prepare the ingredients.


Peel the cabbage from the top leaves, remove the stalk. Rinse the leaves and chop them in thin strips.

Dice the bacon into small cubes.
You can add more bacon if you want, but you should get stewed cabbage, not a lot of cracklings and a bit of cabbage to them. Do not overdo it.

Peel onions, rinse and crumble into small cubes.

Step 2: cook the cabbage.


Transfer the prepared cabbage to the pan, fill it with boiling water to half and put on fire. Add a little salt, bring to a boil and simmer over low heat.

Stew the cabbage until tender, but do not overdo it. Overcooked vegetables are not very tasty, agree. Cabbage should remain a little crispy.

Step 3: fry the bacon.


Fry the bacon in a dry pan, stirring frequently. Heat fat by frying slices of bacon to golden cracklings.

Step 4: mix all the ingredients.


Drain excess water from stewed cabbage, but not all, leave a little.
Add chopped onions and fried bacon.

Add by 1-2 teaspoons ground black pepper and sugar, as well as a little salt.

Cabbage will be tastier if it is slightly acidified, for this add a little vinegar. To taste, it is better to add first a little bit, and then try and add more if you want. It takes me about 1-2 tablespoons vinegar.

Mix everything thoroughly, watching how the cabbage changes color due to vinegar.

Try if there are enough spices, if everything is in order, serve stewed red cabbage to the table.

Step 5: serve the braised red cabbage.


Braised red cabbage is a side dish. Garnish for meat, chicken, game is also very good. And if you add mashed potatoes, you’ll just lick your fingers!
