Fritters with mushrooms

Ingredients for Cooking Pancakes with Mushrooms

For filling

  1. Fresh mushrooms 300 grams
  2. Onion 1 piece
  3. Vegetable oil and fat (50/50) for frying

For fritters

  1. Natural yogurt without additives 1 cup
  2. Kefir 1 cup
  3. Cupcake flour (or just add baking powder to regular) 1 cup
  4. Eggs 2 pieces
  5. Vegetable oil 1 tablespoon (plus for frying)
  6. Sugar 1 teaspoon
  7. Salt to taste
  8. Pepper to taste
  • Main ingredients: Mushrooms, Yogurt, Kefir, Flour
  • Serving 5 servings


Frying pan, mixer, kitchen knife, cutting board, spatula, deep plates, disposable paper towels.

Cooking fritters with mushrooms:

Step 1: prepare the dough.

First, separate the egg whites from the yolks. Take the whites aside, and mix the yolks with kefir, yogurt, butter and flour. Stir, add spices and sugar, mix everything again and let stand for now.

Step 2: cook the mushrooms.

Peel the onions and mushrooms, rinse everything, chop finely and finely.
Heat oil in a pan, melt lard and mix thoroughly, and then throw prepared mushrooms and onions here.
Fry everything over medium heat until everything is cooked and browned. After that, the frying pan with the finished filling will need to be removed from the heat, and its contents cool to room temperature.

Step 3: combine all the ingredients.

Add the cooled mushrooms to the dough and mix so that everything is connected to each other.

Now go back to the egg whites and use a mixer to beat them in a thick foam. To make the whites easy to beat, make sure that the plate and whisk are low-fat.

Gently transfer the protein foam to the other ingredients and mix everything together with a spatula.

Step 4: fry the pancakes with mushrooms.

Heat the oil in a deep frying pan and, when it is hot enough, pour a dough into a pan with a tablespoon or ladle. Try to make sure you get small, neat pancakes.
Fry the dough until it sets and fries well on one side, then turn over and continue to frying until cooked.
Remove the pancakes with mushrooms from the pan, dip them in paper towels to remove excess fat, and then immediately serve to the table.

Step 5: serve the pancakes with mushrooms.

Pancakes with mushrooms should be served warm. You can go to a salad of fresh vegetables, but just with sour cream or with garlic sauce will be stunned how delicious!
