Ingredients for Making Vegetable Stew with Beans
- Olive oil 1 tablespoon
- Onion 1/2 pieces
- 2 cloves of garlic
- Zucchini 2 pieces (medium size)
- Dried oregano 1 teaspoon
- 1/4 teaspoon salt
- Ground pepper 1/4 teaspoon
- Canned beans 400-425 grams
- Cherry Tomatoes 2 handfuls (or 2 medium tomatoes)
- Wine Red Vinegar 1 tablespoon
- Grated cheese (Parmesan) 1/3 cup

Cooking vegetable stew with beans:
Step 1: prepare the vegetables.
Vegetables first of all, however, as always, you need to rinse. Of course with a brush, sponge, or whatever else you use there to wash your zucchini, tomatoes, etc. to a shine.
Peel half the onion from the husk and cut into half rings.
Zucchini do not need to be cleaned, as they are small in size and have not yet had time to acquire hard peels and large seeds. Cut them in half and then crumble into thin slices.
Large tomatoes will need to be crushed, and small cherry tomatoes just cut into halves.
Step 2: prepare the cheese.
Grate the cheese on a fine grater. Everything is simple here.
Step 3: fry the onions.
Heat the olive oil in a pan and, when it warms up, throw the onions and garlic in it. Fry over medium heat stirring all the time until the onions become transparent. It usually takes about 3 minutes, not more.
Step 4: stew the vegetables.
Along with butter and garlic, put the onions in a pan, add the sliced zucchini and put everything on fire. Add salt, pepper, dried oregano and mix well. Close the lid and, making the fire weak, simmer the vegetables until the zucchini is slightly softer, i.e. for 3-5 minutes.
Step 5: add the beans.
Drain the brine from the canned beans and rinse it with running water, wait until the excess liquid drains, and then add the beans to the pot with vegetables. Then send tomatoes and a wine bite.
Increase the heat and cook until all the ingredients have warmed up. It will take another order 2-3 minutes.
Stir the vegetable stew with beans and remove it from the heat. I draw your attention to the fact that vegetables should not boil too much, on the contrary, try to keep the slices of zucchini and tomato in their shape.
Step 6: serve the vegetable stew with beans.
Put vegetable stew with beans on top of any cereal that you like best (rice, couscous), sprinkle with grated cheese on top and serve it to the table! You can also serve this stew with pasta or spaghetti. Easy, tasty, nutritious and satisfying! And certainly useful.
