Potato patties with cheese


Ingredients for making potato patties with cheese.

  1. Mashed potatoes 2.5 cups
  2. Potato (raw) 4 pieces (medium)
  3. Salt to taste
  4. Pepper to taste
  5. Soft cheese (ricotta, for example) 0.5 cup
  6. Grated Parmesan 1/8 cup
  7. Green onions to taste
  8. Fat cream 2-4 tablespoons

Cooking potato patties with cheese:

Step 1: Prepare the potatoes.


Rinse the raw potatoes properly with strong water, peel them, remove all eyes if necessary, and then grate the vegetables. It is better to use a large or medium grater to make the texture of the cutlets more interesting.
Grated potatoes need to be wrung out to remove all excess moisture. For convenience, a strainer can be used for this procedure.

Step 2: Cook the mass for potato patties.


Mix grated raw potatoes with mashed potatoes, add salt and pepper to taste. If you are confused by this "taste", then, approximately, you need to add 1 teaspoon salt and 1/2 teaspoon ground pepper.

Step 3: Prepare the filling.


In another plate, mix all the ingredients for the filling, and this is all the cheese, chopped green onions, just a little salt and pepper and a couple of tablespoons of fat cream. Mix everything carefully to make an almost homogeneous mass.

Step 4: We make potato patties with cheese.


Form cutlets with slightly wet hands. To do this, first take a little potato mixture, mash it in your hands and lay in the middle about 1.5 teaspoons toppings.

Cover the free edges on top and adjust the shape with your hands to make an oval cutlet. Blind all the blanks, laying them aside, separately from each other, so as not to stick together.

Step 5: Fry the potato patties with cheese.


Heat in a pan about two tablespoons of oil, put potato patties in it and fry them over medium heat for 5-7 minutes from each side. During this time, the sides of the cutlets are covered with a ruddy, crispy crust.

After frying, be sure to put the patties on the napkins for a while to remove excess oil. And after that you can serve the finished dish to the table.

Step 6: Serve the potato patties with cheese.


Serve the potato patties with cheese hot on the second. You can decorate them with fresh herbs or a salad of your favorite vegetables. You can also serve these cutlets with a touch of soup, borsch, for example, they combine well.
