Ingredients for Cooking Vegetable Casserole with Chicken
- Chicken fillet 4 pieces (small size)
- Eggplant 1 piece (medium size)
- Tomatoes 4 pieces (large)
- Goat cheese 100 grams
- Fresh basil 1 bunch
- Garlic 3-4 cloves
- Cherry Tomatoes to taste
- Extra virgin olive oil
- Salt to taste
- Ground black pepper to taste

Baking dish, kitchen knife, cutting board, deep plate, disposable paper towels, hot pot holders, spatula.
Cooking vegetable casseroles with chicken:
Step 1: Prepare the Chicken Fillet.
We need clean chicken without skin and bones. Rinse it, cut off the excess fat, if any, and then dry the fillet pieces with disposable paper towels. Cut the poultry into thin slices.
Step 2: Prepare the garlic.
Peel the garlic cloves and cut into small cubes.
Step 3: Prepare the basil.
Wash the basil greens and cut into thin strips.
Step 4: Pickle the chicken.
In a deep plate, combine the chicken with garlic and basil, pour a couple of tablespoons of olive oil, pepper, salt. Stir the chicken pieces in the marinade with your hands and leave them on 15 minutes at room temperature.
Step 5: Prepare the tomatoes and eggplant.
Wash large tomatoes and cherry tomatoes with warm water, dry with disposable paper towels, remove the tails and cut out the seals left after them. Cut all the tomatoes into thin (4-5 millimeters thick) neat slices. Halve a few cherry tomatoes and leave for decoration.
Rinse the eggplant, cut the ends on both sides, pat dry with a paper towel, and then cut the vegetable into circles of the same thickness as the tomato slices.
Step 6: Cook the vegetable casserole with chicken.
Take a heat-resistant, rather deep form and put in it all the previously prepared component casseroles, alternating them with each other. Stack in several rows, depending on the size of the mold. Season with salt and pepper on top, and pour a small amount of olive oil.
Cook the casserole in preheated until 200 degrees oven for 35 minutes.
After about half an hour, sprinkle the casserole on top with goat cheese cubes and cherry tomato halves. Then put the casserole back in the oven and cook more 5-10 minutes. After which the dish will be ready to serve.
Step 7: Serve the vegetable casserole with chicken.
Vegetable casserole with chicken is a very satisfying and at the same time completely non-greasy dish. Serve it immediately after cooking. Simply place the dishes on the plates with a spatula and add to each serving the same light side dish as the casserole itself. For example, spaghetti or boiled rice are great.
