Cutlets in tomato sauce


Ingredients for cooking cutlets in tomato sauce

For cutlets

  1. Beef (tenderloin) 1 kilogram
  2. Pork (brisket) 200 grams
  3. White bread (soaked in milk) 3-4 slices
  4. Cilantro or parsley 1 bunch
  5. Eggs 2 pieces
  6. Onions 1-2 pieces
  7. Mustard cereal 1 tablespoon
  8. Salt to taste
  9. Pepper to taste
  10. Breadcrumbs optional
  11. Vegetable oil optional

For tomato sauce

  1. Tomatoes (peeled) 700 grams
  2. Basil 1 bunch
  3. Garlic 2-3 cloves
  4. Wine or balsamic vinegar 1 tablespoon
  5. Sugar 1 tablespoon
  6. Salt to taste
  7. Hot pepper to taste
  • Main ingredients: Beef, Pork, Onion, Tomato
  • Serving 6 servings

Inventory:

Frying pan - 2 pieces, a meat grinder, a kitchen knife, a cutting board, a deep plate, a spatula, a baking dish, a fork, a wooden spoon, a blender.

Cooking meatballs in tomato sauce:

Step 1: saute the onions.


Peel the onion, rinse with cold water, cut into small cubes and fry in a pan with vegetable oil until transparent and a crispy brown crust forms.

Step 2: prepare minced meat for cutlets.


Rinse beef and pork with cold running water and pat dry with disposable paper towels. Cut the prepared meat into small pieces and scroll in a meat grinder. After it, pass the fried onions and white bread soaked in milk through a meat grinder. Mix everything together and then pass through the meat grinder again.
Add chopped greens, chicken eggs, spices and mustard to minced meat. Mix everything well, and then put in the refrigerator on 20-30 minutes.

Step 3: prepare the tomato sauce.


In a blender, grind peeled tomatoes, along with peeled garlic cloves and washed basil leaves. Then add vinegar, granulated sugar, salt and a little hot pepper to this mixture. Stir the sauce thoroughly and pour it into the pan. Bring to a boil over medium heat, and then cook 1-2 minutes stirring all the time. Remove the finished tomato sauce from the heat, cover and leave aside.
Important: if the sauce is very thick, dilute it with a little boiled water.

Step 4: form the cutlets.


While the sauce cools, with wet hands, make small cutlets from minced meat with minced meat. Then roll each in breadcrumbs.

Step 5: fry the patties.


Take a free pan and heat vegetable oil in it. On medium-high heat, fry the patties until golden brown on both sides. Fry in batches, so it will be convenient to turn them from side to side and they will definitely not fall apart.

Step 6: prepare the meatballs in tomato sauce.


Preheat the oven to 180 degrees. Put the fried cutlets in a tight shape to each other, you can even crush them a little to fit. Top with tomato sauce so that it covers the patties. Send this beauty baked in the oven on 20-25 minutes. During this time, meatballs will fully reach readiness, and tomato sauce will become even tastier and more aromatic.

Step 7: serve the patties in tomato sauce.


Serve the patties in tomato sauce as hot for lunch or dinner. As a side dish, everything is the same for them as for ordinary cutlets. Do not forget to pour abundantly each portion of the sauce that remained in shape, and then immediately start the meal until these delicious cutlets have time to cool.

Recipe Tips:

- Instead of hot pepper, a little Tabasco can be added to tomato sauce.

- To make it easier to peel the tomatoes from the skins, dip them briefly in boiling water, and then cool sharply afterwards.

- Instead of fresh tomatoes, you can use canned, also peeled from skins.
