Put the pan on the fire. Cut the lard into small pieces and drop it into a hot skillet. Stir occasionally while frying the greaves on all sides. Fry until all the fat has melted. Then you can get the fat, but I know that many people love it, so especially for them, the fried greaves can be left in a pan and go to the next step.
Step 4: Fry the pork and potatoes in a pan.
Without removing the pan from the heat, add slices of pork to it and fry the meat until it changes color from pink to brown on all sides.
Add chopped potatoes to the pork, pepper. Cover and cook periodically while stirring until the meat is completely fried and the potatoes have a delicious crust. That is, approximately, still 30-40 minutes. At the very end, when the dish is almost ready, you need to salt it and add peeled and chopped garlic cloves for flavor. Fry everything over low heat yet 5 minutesand then remove from heat.
Attention: mix gently, prying with a spatula and carefully turning so that the potatoes do not fall apart.
