Cooking vegetables with rice for the winter:

Step 1: prepare the vegetables.

First prepare the vegetables. Peel the onion and garlic. Rinse the onion with cold water in order to make it more comfortable to work with it in the future. Cut a clove of garlic and onion into medium-sized cubes.
Peel the carrots, rinse thoroughly with warm water, and then cut into cubes of the same small size.
Rinse the zucchini thoroughly. If he is young, then leave it that way, just cut it into cubes. If the vegetable has managed to grow a thick skin, then it must be cut with a knife, and in addition to this, also clean the seeds from the core of the vegetable, and only then cut the peeled pulp into cubes.
Rinse the tomatoes, dip in boiling water on 30 secondsand then cool by drastically moving them to a plate of cold water and ice. Thanks to this operation, now you can easily peel the tomatoes from the skin, after doing this, cut the tomatoes into medium-sized cubes.
Ear of corn must first be boiled, and then cut the grain from it.
Divide the bell pepper in half, remove the stem and seed core, and then rinse the vegetable thoroughly. Cut peeled and washed peppers into cubes, as well as all other vegetables before.

Step 2: stew the vegetables.

Pour the vegetable oil into a skillet, heat it, and then pour the onions and garlic and fry them over medium heat for 3-4 minutes.
After, add the cubes of carrots and zucchini, mix and continue to simmer everything together further further about 4-5 minutes.
Then, with other vegetables, sprinkle tomatoes, sweet peppers and corn grains. Mix everything well. Add salt, granulated sugar to vegetables, if necessary, and pepper the dish. Continue to simmer everything for 5 minutes.

Step 3: prepare the pic.

Cook rice at the same time as vegetables. First, rinse the cereal thoroughly so that it remains crisp when ready-made, and then fill it with water and boil until half cooked. That is, rice should become soft on the outside, but remain hard inside.

Step 4: prepare vegetables with rice.

Add rice to the vegetables in the pan. Stir everything well and simmer over low heat yet 2-3 minutes. Be sure to try everything on salt, if necessary, add salt to the dish.
At the end, pour apple cider vinegar into vegetables with rice and immediately remove them from the heat.

Step 5: we prepare vegetables with rice for the winter.

In sterile glass jars, add a mixture of stewed vegetables and rice. Fill the container only to the neck, as we have not yet cooked the rice completely, and in the process of further cooking it will increase slightly in volume.
Cover the jars with blanks with lids, put them in a pan filled with warm water, and the bottom of which is lined with a kitchen towel. Now bring it all to a boil, and over low heat pasteurize vegetables with rice for 30 minutes.
After pasteurization, immediately tighten the lids, place the blanks upside down and cover with a plaid or kitchen towels. This improvised "fur coat" can only be removed after the jars and their contents have cooled to room temperature.
Remove vegetables and rice prepared for the winter in a place that is cool and inaccessible to sunlight.

Recipe Tips:

- Instead of corn, you can add green beans, cut into small pieces, it also turns out very tasty.

- I always make such blanks in small jars so as not to store them at all after opening, but to eat them right there.
