Ingredients for Cooking Canned Cucumbers in Tomato

The main

  1. Cucumbers to taste

Cooking canned cucumbers in tomato:

Step 1: Prepare the cucumbers.


Put the spices of your choice on the bottom of the sterilized glass jars, I have dill umbrellas and garlic cloves. Rinse the cucumbers properly, cut off the tips on both sides. You can cut vegetables in quarters, but if the cucumbers are too large, as in my case, I cut them into plump circles. For beauty, I use a special knife so that the cucumbers look more appetizing and could be served on the festive table.
Arrange the prepared cucumbers in jars with spices and pour boiling water over it.

Step 2: Prepare the filling of tomato juice.


After a couple of minutes, drain the water from the cucumbers and prepare a tomato fill, adding as many spices as you need (for this, the volume of drained water needs to be measured).
So, boil the water again, adding tomato sauce, granulated sugar and salt. Stir everything until completely dissolved. As soon as the marinade boils, pour vinegar into it and immediately remove from heat.

Step 3: Preserve the cucumbers in the tomato.


Pour the tomato marinade into the jars of cucumbers and send the blanks for pasteurization. To do this, lower the jars into a pot of boiling water (do not forget to line the bottom with a towel, and that the jar should be immersed only 2/3) and sterilize them there for 10-15 minutes. After hot jars with blanks, you immediately need to tightly close (or roll up) the lids.
Leave the canned cucumbers at room temperature until they cool completely, and then hide them in a dark and cool place with other preparations.

Step 4: Serve the cucumbers in the tomato.


Cucumbers in tomato is a very tasty snack, which will bring a tangible variety to your winter menu. And on the festive table, these cucumbers will make a splash. Make some interesting snacks with them, for example, by putting them on skewers with olives or smoked sausages, and your guests will be delighted.

Recipe Tips:

- Instead of tomato sauce, you can take tomato paste or even cook it yourself. To do this, tomatoes need to be peeled and ground in a blender or mince them.

- To roll the lids on your workpieces, use a proven seaming machine, not just what you just bought.
