Ingredients for Cooking Hot Peppers for the Winter
- Hot pepper how much will fit in jars
- Vinegar 9% 5 cups
- Pure water 1 cup
- Salt 4 teaspoons
- Sugar 2 tablespoons
- Garlic 2-4 cloves (depending on how much you love it)

Deep pan, dish towel or gauze, ladle, wide funnel, kitchen knife, cutting board, tongs for cans, boiled jars with lids.
Cooking hot peppers for the winter:
Step 1: Prepare hot peppers.
Rinse hot pepper pods thoroughly with warm running water several times and pat dry. Then remove the green ponytail by cutting it off along with the blunt base. Carefully clean the seeds as much as possible for you. Cut the pods into rings, thinner, thicker.
Step 2: Cook the marinade.
Pour the right amount of vinegar into the pan, diluting it with water in a ratio of 5 to 1, as indicated in the recipe. It is better to take water not from the tap, but bottled, it is cleaner, and therefore tastes better.
Add sugar and salt to a mixture of vinegar and water, put everything on fire and bring to a boil. When the liquid is bubbling, slightly reduce the power of the stove so that nothing boils away, and leave everything to boil for 10-15 minutes.
At the very end, add whole but peeled garlic cloves. Remove the brine from the heat.
Step 3: We prepare hot pepper for the winter.
In the meantime, while pouring is boiling, lay the peppers in clean, boiled and still hot glass jars. For beauty, you can lay it in layers, alternating green and red peppers, but I don’t have so many red ones for this, so let everything be mixed anyhow.
Gently pour the brine over the jars of hot peppers, leaving very little space for air.
Cover the filled cans with lids. Take a clean pan or use the same one in which the brine was cooked, just remember to rinse, spread a waffle towel or several layers of dense gauze on its bottom. Put the cans, fill them with hot water to the shoulders (its temperature should be almost the same as the temperature of the brine inside the cans) and boil in this form for 10 minutesby closing the pan with a lid. And be sure to make sure that the water does not boil very much and does not pour into the cans.
Remove the jars that are sterilized along with the workpieces from the pan, tightly tighten the lids, turn them upside down and put on a dry towel. When hot peppers prepared for the winter have cooled, they can be turned back and put away in a dark, cool place.
Step 4: Serve hot pepper prepared for the winter.
