Ingredients for Fried Zucchini Salad
- Young zucchini or zucchini 2 pieces

Making a salad of fried zucchini:
Step 1: Prepare the zucchini.
Young zucchini or zucchini, as in my case, thoroughly rinse with running water, cut the ends on both sides and cut the vegetables into very thin slices. This can be done using a special grater or a regular knife for peeling vegetables. But with a kitchen knife, you are unlikely to make slices thin enough.
After slicing, lay out slices of zucchini or zucchini on disposable paper towels and wait until excess moisture is gone.
Step 2: fry the zucchini.
Heat the pan with a little oil. Of course, it is ideal to use a special ribbed grill pan, since when frying on it, vegetables absorb less oil, and besides, they will acquire an appetizing “striped” pattern.
Put a few thin slices of zucchini on a preheated pan and fry them until golden brown on both sides. Fry over high heat for a short time so that the vegetables do not have time to soften. Put the finished pieces on paper towels to get rid of excess fat, and then start preparing the next batch.
Step 3: prepare the cilantro.
Rinse cilantro with warm running water, dry, cut thick stems and discard them, and chop the leaves into small pieces.
Step 4: prepare the mint.
Repeat with mint all the same actions that were done previously with cilantro. That is, rinse, dry, cut.
Step 5: preparing a gas station.
In a small deep plate, mix olive oil, lemon juice and honey, beat them with a fork until smooth. Add to the dressing peeled and then chopped garlic clove and mix again.
Step 6: mix the fried zucchini salad.
In a salad bowl, add the fried zucchini, add cilantro and mint to them, salt and pepper to taste. When there are enough spices, pour the honey dressing in the salad and mix everything carefully. That's it, the salad of fried zucchini is ready, start serving it on the table!
Step 7: serve the salad of fried zucchini.
Fried zucchini salad is best served for lunch or dinner as a complement to main courses or as a light, refreshing side dish. Just cook it at least once, and after that you will definitely want to repeat this dish again and again.

- Sometimes grated parmesan or any other hard cheese is added to this salad.
- If you like nuts in salads, then, for example, pinecones are very suitable here. You can even fry them slightly before adding to the zucchini.
- Also, thin slices of zucchini and zucchini can be baked in the oven, if you have a "grill" mode.
