Young cabbage salad


Ingredients for Making Young Cabbage Salad

  1. Cabbage young 1 head
  2. Dill and / or parsley 2 bundles
  3. Vegetable oil 3-4 tablespoons
  4. Apple vinegar 3-4 tablespoons
  5. Large salt to taste
  6. Sugar to taste
  7. Black pepper (ground or peas) to taste

Inventory:

Deep plate, mortar and pestle, grater for shredding vegetables, flat plate, liter glass jar, salad spoon, fork.

Cooking young cabbage salad:

Step 1: Prepare the cabbage.


Peel the head of the top leaves and rinse it with running water. Use a special grater for shredding vegetables and rub young cabbage on it. Do not forget that the stump needs to be circumvented or even cut in advance.
Transfer the chopped cabbage into a deep plate and add sugar to it. Stir and shake it with your hands to make clear juice.

Step 2: Prepare the greens.


Rinse the greens thoroughly with warm water so that it is more fragrant and shake off excess moisture. Then lay the bunches on a cutting board and cut the stems, laying them temporarily aside, and chop the remaining leaves into small pieces.

Step 3: Preparing a salad dressing.


Put the stalks of grass remaining after the previous step into a mortar, sprinkle with salt and add pepper, grind everything, turning it into a bright green paste.
Add vegetable oil and vinegar to the greens, using a fork or whisk, if you like, mix everything, turning it into a homogeneous liquid dressing.

Step 4: Mix and infuse the young cabbage salad.


Pour the greens dressing into shredded cabbage, add chopped greens leaves there and mix everything thoroughly. Cover the resulting salad with a press constructed from a plate of suitable diameter and a liter jar filled with water. Put everything in the refrigerator on 30 minutes minimum, after which you can serve the cooked crisp cabbage to the table or store it on demand by removing the press, but tightly closing the lid.

Step 5: Serve the young cabbage salad.


Young cabbage salad is surprisingly good both on its own and as a light side dish for all kinds of dishes, whether it is hot smoked fish or steamed meat patties. Therefore, serve it to the table without fear, because no one will pass by this wonderful bright and summer-like fresh dish.

Recipe Tips:

- Vinegar can be replaced with lemon juice.

- You can also add chopped garlic, mustard oil and even sesame seeds to a salad of young cabbage.

- Many housewives will probably say to themselves that radishes, fresh carrots or cucumbers are asked for in this salad, so if you think it is necessary, you can add other vegetables.
