Kitchen knife, cutting board - 2 pieces, paper kitchen towels, deep pan with a lid (capacity 3 liters), slotted spoon, potato crusher, stove, frying pan, wooden or silicone kitchen spatula, oven, tablespoon, kitchen towel, heat-resistant shape for pastries (size 13 by 19 centimeters), kitchen potholders, a portion plate.
Cooking lean casseroles:
Step 1: prepare the ingredients.
First of all, using a sharp kitchen knife, we peel the vegetables specified in the recipe, and each mushroom gets rid of the roots. Then we wash these products under trickles of cold running water, dry with paper kitchen towels, take turns on a chopping board and continue the preparation. We cut the potatoes into slices or slices of arbitrary shape with a size of 2 to 3 centimeters, send them into a deep pot and put on medium heat.
Onions in small cubes up to 1 centimeter in size, and chop the mushrooms in the same way as the previous product, in layers or quarters with a width of 5 to 7 millimeters. Finely chop the parsley, put the remaining ingredients on the countertop, which will be needed to prepare the dish, and move on.
Step 2: boil the potatoes.
While we were slicing, the water in the potato pan began to boil, carefully remove the white froth from the surface of the bubbling liquid with a slotted spoon and cook the vegetable until fully cooked for 18-20 minutes.
Step 3: prepare the mushroom filling.
We don’t lose a minute, turn on the next burner on medium heat, put a frying pan on it and pour in a couple of tablespoons of vegetable, preferably refined oil. After a few minutes, dip the onions in preheated fat and pass it until transparent for about 2-3 minutes, occasionally stirring with a silicone or wooden kitchen spatula.
As soon as the vegetable is soft, add chopped champignons to it and simmer everything together in their juice for about 10-11 minutes, after which all moisture evaporates and these ingredients begin to fry. Season them to taste with salt, black pepper and chopped parsley. Do not forget to stir, we stand the mushroom filling on the stove yet 4-5 minutes and move away from the fire to the side until use.
Step 4: prepare mashed potatoes.
When the potatoes are cooked, using a kitchen towel, remove the pan from the stove, cover with a lid and drain almost all the liquid from it, leaving quite a bit, that's enough 5-6 tablespoons. Then season the boiled vegetable to taste with salt, black ground pepper, knead with a special pusher to a smooth smoothie without lumps and proceed to the next step.
Step 5: form a lean casserole.
Turn on the oven for heating at 200 degrees celsius and using a baking brush, grease the bottom of a heat-resistant or non-stick form with a tablespoon of refined vegetable oil. We move half the potato mixture into the baking dish and level it with a tablespoon. On top of mashed potatoes we distribute the whole mushroom filling and cover with the remaining potatoes, which in turn are processed with the remaining vegetable oil.
Step 6: bring the lean casserole to full readiness.
Now we check the oven and, if it has warmed up to the desired temperature, put the half-finished casserole there on 25-30 minutes. As soon as the product is covered with a delicate golden crust, we pull the kitchen gloves on our hands, rearrange the form on a cutting board, previously laid on the countertop, and allow its contents to cool slightly. Then, using a kitchen spatula or a clean knife, divide the casserole into 4-5 equal servings, arrange them on plates and invite the family to the table!
Step 7: serve the lean casserole.
The lean casserole is served warm or hot as a full-fledged vegetarian main course. After cooking, it is divided into equal parts, they are distributed on portioned plates and, if desired, decorated with sprigs of dill, parsley, cilantro or stalks of green onions. In addition to such a chic lunch or dinner, you can put on the table sauces based on vegetables, salads, marinades and pickles. Cook with love and Fasting will be a joy!
