Cooking potatoes with meat and mushrooms in the oven:
Step 1: prepare the meat.
First of all, we wash a fresh collar under trickles of cold running water, dry it with paper kitchen towels, put it on a cutting board and use a sharp kitchen knife to remove excess fat, veins, film, and small bones that often remain on the log house.
Then cut the meat across the fibers into pieces about 2 centimeters thick. In turn, cover each with plastic wrap and beat off with a kitchen hammer. Strongly do not zealously, slightly, so that the thickness of the portions decreases by no more than 5 millimeters, but at the same time they do not turn into mincemeat. Then sprinkle slices of pork with red dry wine, sprinkle on all sides to taste with salt, black pepper and a mixture of spices. We send the collars into a small bowl, tighten with plastic wrap, put in the refrigerator and forget about it before use, let it pickle.
Step 2: prepare onions and mushrooms.
Meanwhile, using a new knife, we rid the onions from the husk, and the champignons from the roots. We rinse these products thoroughly, dry them, put them on a clean board and continue preparation. We chop the onion with cubes or straws with a thickness of 5 to 7 millimeters, grind the mushrooms in the same way or with plates and move on.
Step 3: fry the onion with mushrooms.
We put a deep frying pan on medium heat and pour a little vegetable oil into it, two tablespoons is quite enough. After a few minutes, dip the chopped mushrooms and onions into the preheated fat. At first, these ingredients will pour a lot of juice and stew, but after about 10-11 minutes gradually begin to fry. It is not necessary to bring them to full readiness at this stageas soon as the onion becomes soft, transparent and covered with a very delicate golden crust, remove the pan from the stove.
Step 4: prepare the potatoes.
Then we begin to deal with other important components of the dish. We peel the potatoes, rinse it, dry it, put it on the board and cut into rings, cubes or small cubes with a thickness of not more than 5-6 millimeters. Step 5: prepare the cheese and inventory.
Now remove the packaging from the hard cheese and grind it on a fine, medium or large grater into a clean bowl. After that, turn on the oven for heating at 200 degrees Celsius, put a non-stick or heat-resistant baking dish on the countertop, grease its bottom, as well as the inside of the sides with the remaining vegetable oil and proceed to the next, almost final step.

We spread the chopped potatoes into the prepared form, distribute the meat on top with an even layer on it, cover the pork with fried mushrooms and onions, make a net of mayonnaise on them and sprinkle all with grated hard cheese.
