Cooking green tomatoes for the winter, stuffed with garlic:
Step 1: prepare the garlic.
Attention: the amount of garlic should match the number of tomatoes. That is, for each vegetable there is one clove. We will have small tomatoes, so there should be around garlic 30-36 pieces. So, first of all, we lay out the components on a cutting board and slightly press down with the edge of the knife. Then with clean hands we clean the cloves from the husk and rinse well under running warm water. Prepared garlic is moved to a deep plate and for now leave aside.
Step 2: prepare the tomatoes.
We carefully wash green tomatoes under running warm water and put them on a clean cutting board.
Using a knife, cut the components in half and immediately move them into a deep bowl. Attention: vegetables can not be cut to the end, so that later it would be more convenient to ram them into jars.
Step 3: prepare jars with lids.
To prepare this dish, it is not necessary to sterilize the jars with lids; it is enough to rinse them thoroughly under running warm water. To do this, we’ll use a kitchen sponge and ordinary baking soda (it very well cleans containers from grease and other dirt). We rinse the containers with lids until the glass begins to creak if you hold it with wet fingers. In the end, we put everything upside down on a fabric towel, with which we pre-cover the kitchen table.
Step 4: prepare green tomatoes for the winter, stuffed with garlic.
In clean liter jars, put one or two branches of dill for preservation. Next, we put a clove of garlic in each tomato and then carefully place the vegetables in glass containers so that they fill them almost to the top.
Now we pour clean water, table vinegar into the middle pan, and also pour salt, sugar, bay leaf and dill in the grains. We put the container on a small fire and bring to a boil. Important: do not forget to stir everything with a tablespoon from time to time. Immediately after that, turn off the hotplate and proceed to the process of pickling tomatoes.
Using a scoop, pour the solution into banks. It should cover the vegetables completely. At the end, with the help of the kitchen tack, we take the pan and be sure to pour the remains of the marinade with dill grains and bay leaf into the container. The bottles are tightly closed with metal caps and set aside to reach room temperature. After we put the jars of pickled tomatoes in the refrigerator and wait for the winter.
Step 5: serve green tomatoes stuffed with garlic for the winter.
In fact, green tomatoes can be served at the dinner table in a couple of weeks, which I actually do. Well, they are very tasty! It is almost impossible to resist. Therefore, if desired, we take out one can from the refrigerator, open the lid, and we take out the tomatoes with a fork and transfer to a deep bowl. We treat the household with pickled vegetables along with fried potatoes, baked meat and other dishes to your taste.
Bon appetit to all!
- If desired, a couple of pinches of dried ground celery can be added to the marinade. Then the tomatoes will get an interesting taste and aroma;
- so that the garlic does not fall out of the tomatoes, you can make a shallow cross-shaped incision at the top of each vegetable;
- if you didn’t have enough marinade, do not be discouraged. We just do the same proportion of the ingredients again, boil them and fill the solution with the remaining tomatoes;
- so that the jars do not explode, be sure to choose dense beautiful green tomatoes without any damage to the surface.
