Cooking cottage cheese and rice casserole:
Step 1: prepare the prunes.
Rinse the prunes slightly under running warm water and then lay them in a deep bowl. Pour dried fruits with boiling water and leave aside for 5-7 minutes. After the allotted time, carefully drain the liquid, and put the components on a cutting board.
Using a knife, finely chop the prunes into slices and then transfer to a free plate.
Step 2: prepare the pic.
Pour the rice into a sieve and rinse thoroughly under running warm liquid until it becomes transparent. Then pour the cereal into a small cauldron and pour clean cool water. We put the container on medium heat and wait for the liquid to boil. Immediately after that, thoroughly mix the component with a tablespoon, cover with a lid and boil until fully cooked. It takes me approximately 10-15 minutes. Then turn off the burner, and set the cauldron aside. Let the rice cool.
Step 3: prepare the eggs.
Using a knife, we break the eggshell, and pour the yolks with proteins into two different containers. The first component is in the middle bowl, and the second is in the deep bowl for the mixer.
Step 4: prepare the butter.
We spread the butter in a free saucer and chop into several parts if desired. Now we leave it aside so that it independently reaches room temperature. Attention: do not speed up this process with a microwave, as this can subsequently ruin the consistency of the casserole.
After all, with a fork, knead the butter and start cooking the dish.
Step 5: prepare the cottage cheese and rice casserole.
In a bowl with egg yolks, spread soft butter, and pour regular and vanilla sugar. Using a fork or hand whisk, thoroughly mix all the ingredients until smooth.
Next, add the cottage cheese here and again, beat everything well with improvised inventory.
Using a mixer, beat egg whites until they turn into a thick, stable foam.
Immediately after this, we introduce them in small portions into the curd mass and gently mix everything with a tablespoon.
At the end, put the cooked cooled rice and chopped prunes in a bowl. Once again, mix everything with the improvised inventory until smooth and proceed to the preparation of the casserole itself.
Lubricate the bottom and walls of a deep baking dish with a pastry brush with a small amount of vegetable oil. Now we spread the cottage cheese and rice mass here and be sure to level its surface with a tablespoon to make the pastries beautiful. Turn on the oven and heat it to temperature 160-180 degrees. Immediately after that, put the form on a medium level and bake the dish for 30-40 minutes until a golden brown crust appears on the surface. As soon as this happens, with the help of kitchen tacks we take out a container with a casserole and set it aside. Let the pastries cool slightly.
Step 6: serve the cottage cheese and rice casserole.
When the cottage cheese and rice casserole becomes warm, transfer it from the mold to a special flat plate, use a knife to cut the pastries in batch slices and serve with a fragrant tea or aromatic coffee to the dessert table. If desired, guests can be invited to enjoy the casserole with jam, whipped cream, condensed milk or just with sour cream. In any case, it will be satisfying and tasty!
Bon appetit to all!
- any rice that suits your taste is suitable for cooking casseroles. For example, for kids, you can take a special one for children, and it will not be bad for a variety like Jasmine, Arborio, for sushi and even round-grain;
- Instead of prunes, other dried fruits can be added to the curd-rice mass. In addition, the casserole will go well with various fruits and berries. For example, with strawberries, raspberries, blueberries, currants, as well as apples, pears, apricots and many others to your taste;
- Before serving, casserole can be sprinkled with powdered sugar. Just make sure that the baking is cool, otherwise the component will melt and you won’t get such beauty.
