Cooking whole chicken in the oven:

Step 1: Prepare the chicken.

Usually a good domestic chicken can be found in the market or in a specialized shop, where it is usually sold already gutted. Therefore, we can only thoroughly rinse and dry the carcass of the bird, and then cut it for ourselves. For this dish, we just flatten the chicken, much as if we were cooking chicken tobacco.
First, cut the chicken along the spine with a sharp knife. This is best done with sawing movements, gently crushing the light chicken bones.

After that, you can easily open the carcass of a bird, like a book.

Turn the flattened chicken upside down and push it until you feel the bones begin to break. This will allow to finally open the chicken carcass and now nothing will prevent it from being baked both from the outside and from the inside.

Step 2: Prepare the garlic.

Peel the garlic cloves and grind with a fine grater or press, turning the ingredient into an aromatic slurry.

Step 3: Prepare the apples.

Rinse apples by wiping them thoroughly with your hands. Dry the fruit with a towel and divide into quarters. Cut the seeds with the knife and get rid of the tails. Cut the apples into as small slices as you see fit, but do not overdo it.

Step 4: Homemade chicken in the oven.

Set the oven to warm up 180 degrees Celsius. At this time, grate the chicken carcass with salt, dried herbs, spices and garlic, do not forget to smear the same inside. Slices of apples lay in the center of the pan, and on them the chicken, turning it upside down. Pour some water into the bottom and put everything in a preheated oven. Bake a homemade chicken a little longer than usual. And in order to get a delicious golden crust, sometimes open the oven and use a spoon to water the chicken with the fat dripping onto the bottom of the pan. Important: Please note that you do not need to lubricate the baking dishes, as there is enough fat to drain from the poultry.
You can check the readiness of the bird with a toothpick or fork. Just pierce it in the fleshy place. If the juice running out of the puncture is transparent or it does not exist at all, then everything is ready, if it is pinkish or burgundy, then you must continue to bake the chicken further. Usually, all I have to bake is 1.5-2 hours, depending on the size of the carcass.

Step 5: Serve the oven-baked chicken.

As soon as you get the finished chicken out of the oven, you can serve it right away. But it is best to first chop the steaming carcass into portions and arrange them in separate plates with a side dish. But what to do next with an appetizing, crispy bird, you yourself know for sure.
