Making Tomato Pizza Sauce:
Step 1: Prepare the onion and garlic.
Peel the onion and garlic cloves. Dice the onion, and rub the garlic on a fine grater or you can use the garlic. We shift the onions into a plate, garlic can be left on a grater.
Step 2: Prepare the tomatoes.
Tomatoes must be peeled. There are two ways to do this. The first is fast, just peel the tomatoes like potatoes, thinly cutting the skin with a knife to peel vegetables. The second is a little longer, but less wasteful. We make a shallow cross-shaped incision on the tomatoes, scald the tomatoes and remove the skin with our hands. Cut into small cubes and transfer to a plate. The more ripe tomatoes you can buy, the tastier the sauce will be.
Step 3: Cook the tomato pizza sauce.
We put the stewpan on the fire, pour the vegetable oil, heat a little. Put the onion, fry it for about 5 minutes over high heat until it becomes soft and translucent. Add garlic and tomato paste. Stir, warm over low heat for about 2 minutes.
Add chopped tomatoes, salt, sugar and spices. Stir and heat on the lowest heat for about 5-7 minutes. Be sure to interfere from time to time and make sure that it does not burn.
Now you need to turn an almost finished sauce into a homogeneous mass. The easiest way to do this is if you have a remote blender. Remove the pan from the heat, stir the blender in a saucepan and turn on, chop until a homogeneous mass is obtained. If you have a stationary blender, then you have to transfer the sauce from the stewpan to the blender bowl and vice versa. If you don’t have either, wipe the sauce through a sieve, just let it cool a little beforehand.
The sauce is almost ready, it remains to add butter. This is not a traditional step at all, but butter is the most incredible way to improve the taste, aroma and texture of the sauce. Stir the sauce, put on a small fire and warm for about a couple of minutes. Try for sweetness, salinity and pungency. If necessary, add more sugar, salt or black pepper. Turn off the heat on the stove and leave the sauce to cool.
Step 4: Serve the tomato pizza sauce.
Tomato pizza sauce can actually be used not only for pizza, it is perfect for any pasta, fried meat, as well as for barbecue or croutons.
Enjoy your meal!
- If possible, take fresh, one or two branches instead of dried oregano and basil. Finely chop them and add together with the tomatoes. The taste and smell of the sauce with fresh herbs is special, and the pizza will be very tasty.
- In supermarkets they sell a set of spices "Italian herbs", you can use it if there is no separately oregano and basil.
