Cooking pies with cabbage on kefir:

Step 1: Cook the dough.

We start preparing the dough by mixing kefir and soda. To do this, place both ingredients in a deep plate and mix thoroughly. There should be a reaction, so the mixture will begin to hiss characteristically. Let her stand 5 minutes. Then add vegetable oil, salt and half the prepared flour to kefir and soda. The flour must be gradually interfered by sifting it through a strainer. With a whisk, mix the dough until smooth. Try to break all the flour lumps.

After, start adding the remaining flour in the same way, until a homogeneous, smooth and elastic mass is obtained. Leave the resulting elastic dough after kneading in a warm place on 15-20 minutes. This time should just be enough to prepare the filling for the pies.

Step 2: Prepare the cabbage.

Rinse the cabbage thoroughly, removing even the smallest grains of sand. Be sure to remove the dead, yellowed and grayish leaves, do not forget to also remove the bitter stump.
Place clean cabbage leaves on a cutting board and chop on thin strips. The smaller the pieces of cabbage, the more tender the filling in the finished cakes will be.

Step 3: Prepare the carrots.

We remove the peel from carrots, it is best to use a special knife for peeling vegetables for this. Rinse the cleaned ingredient under a stream of warm water, then grind it with a knife for chopping vegetables or, if you do not have such a kitchen appliance, you can use an ordinary coarse grater.

Step 4: Prepare the onion.

Remove the husks from the onion and cut off the ends. After cleaning, rinse the vegetable with cold water and, without wiping it dry, crumble into small cubes. Fry the crushed ingredient in a pan with a small amount of vegetable oil until a clear, but not golden color. Important: if you want the onion to be almost not felt, and present only with a slight aftertaste, then you can rub it on a grater, but then skip the step of frying this ingredient, just add it to other vegetables.

Step 5: Prepare the filling.

Place chopped cabbage leaves and carrots in a pan, add salt, a mixture of ground peppers and a very small amount of hot water. Put the vegetables stewed under a lid over low heat for 10-12 minutes. When the ingredients soften a little, remove them from the heat, add the fried onions and tomato paste. Shuffle. If necessary, add more salt and other spices. That's all, the filling is ready, proceed to the formation of pies.

Step 6: Form the pies.

First prepare the work surface by sprinkling flour on the countertop and rolling pin. Now, pinch off a small piece from the dough, roll it into a ball in your palms, and then flatten the dough with a rolling pin, making a blank in the form of a cake. Important: when working with the test, hands should be dry to avoid sticking.

Put the filling in the middle of the tortilla, about one or one and a half tablespoons. Pull the dough by the edges toward the center and firmly fasten together to form a seam. Check for small holes in the workpiece, otherwise the filling can just run out. If everything is in order, then continue to form pies until you have consumed all the prepared dough and filling.

Step 7: Bake the pies.

Preheat the oven to 200 degrees Celsius. In the meantime, it reaches the desired temperature, get involved in preparing the pan. To do this, grease it well with vegetable oil. Place pies with cabbage on a baking sheet with the seam down. Important: leave some space between baking blanks, because during the cooking process they can increase in size and simply stick to each other. Everything is ready to send blanks to the oven. You need to bake pies with cabbage for 20 minutes. After this time, remove the finished baking from the oven and let it cool for 5-10 minutesthen proceed with serving.

Step 8: Serve the pies with cabbage.

Serve the prepared pies with cabbage to the table as an afternoon snack or instead of bread for soups and broths. Or you can just have an unscheduled family tea party and enjoy fragrant and delicious home-made cakes, washing down your favorite hot drink. But do not get carried away, because the frequent use of baking can adversely affect your figure.
