Cooking duck legs in the oven:

Step 1: Prepare the duck legs.


Duck is a very fat bird, so before cooking it requires special attention. To begin with, burn poorly plucked feathers, if any. Then cut off excess fat and skin from the sides so that it does not dangle at the edges. Usually, a few incisions are made in the middle of the chicken legs, dissecting the skin and fat, this allows duck meat to bake better and become drier. When you are finished cutting off excess fat and skin, rinse the chicken legs under running cool water, and then put it on disposable paper towels and wipe off, removing drops of liquid.
Put the prepared duck legs in a deep dish. Sprinkle poultry with salt, dried thyme and a mixture of ground peppers. Hand rub the spices, distributing them over the entire area of ​​duck legs. Cover the dish with cling film and leave the bird to marinate at room temperature on 1 hour.
After the required time, remove the chicken legs from the bowl and rinse again under cool water. And then repeat the procedure with drying, again using paper towels. You can now proceed to the next step.

Step 2: Bake the duck legs in the oven.


Preheat the oven for 170-175 degrees Celsius. It is better to bake a duck at a lower temperature, but more time. While the oven is warming up, transfer the duck legs to a heat-resistant baking sheet, you do not need to lubricate it with oil, because the duck has enough own fat. Bake the legs for 1 hours 30 minutes. But after half the time set for cooking, open the oven and grease the duck with the fat that has gathered on the bottom of the pan. I usually do this with a long wooden spoon so as not to get burned. When the duck is ready, turn off the oven and, without opening it, let the duck stand still 15 minutes. Only after that start serving poultry dishes on the table.

Step 3: Serve the duck legs baked in the oven.


I usually do not serve the finished duck legs, but separate the meat from the bone and cut it into small pieces. As a side dish, baked vegetables or boiled rice, sometimes even potatoes, are suitable. Be sure to serve the duck meat sauce and start a hearty meal.

- If you have time, then prepare the duck legs in advance, leaving them to marinate in spices for the night, but do not leave them in this case at room temperature, but place them in the refrigerator.
