Homemade Chicken Noodle Soup


Ingredients for Making Chicken Noodle Soup

For homemade noodles:

  1. Wheat flour 2/3 cups
  2. Chicken egg 1 piece
  3. Salt to taste
  4. Olive oil 1 teaspoon

For soup:

  1. Fresh chicken leg 400 grams
  2. Large onion 1 piece
  3. Large carrot 1 piece
  4. Dried dill root 0.5 teaspoon
  5. Dried celery root 0.5 teaspoon
  6. Dried cloves 3-4 pieces
  7. Pure cold cold water 2 liters
  8. Salt to taste
  9. Black peppercorns to taste
  10. Fresh parsley to taste

Cooking chicken noodle soup:

Step 1: prepare the egg for the dough.


Before we make soup, we need to make noodles. To do this, use a knife to break the eggshell, and pour the yolk with protein into a medium bowl. Add salt to this and, using a fork, shake everything well until smooth. Immediately after this, we begin to prepare the noodle dough.

Step 2: prepare the dough for homemade noodles.


Sieve flour in small portions with a sieve in a bowl with a beaten egg. At the same time, we continue to whip everything with a fork so that lumps do not form. Important: kneading the dough is very difficult, as its consistency is quite viscous and tight. But believe me, it's worth it. So, we continue to add flour until it becomes difficult to mix everything with improvised stock.

Immediately after that we transfer the mass to the kitchen table. Do not forget to sprinkle it with a little flour. We continue to knead the dough with clean hands, and so on, until it becomes steep, hard and stops sticking.

Now we give it the shape of a ball, cover it with a cloth towel and leave to rest for 15 minutes. After the allotted time, we knead the mass again, adding flour if necessary. This must be done so that the dough is elastic and does not stick to your hands. In addition, when we put the noodles in a boiling broth, it should remain transparent. And this is possible only if the dough is not all in flour.

Step 3: Cook the homemade noodles.


We spread the dough on the kitchen table, but do not crush it with flour. Now the most difficult process is beginning, so if at least one man is near you, invite him to participate in the preparation of dinner. Using a rolling pin, we carefully roll out the dough until a thin layer with a thickness of no more than 1 millimeter. Due to the fact that the egg is part of the mass, it pulls it together like rubber. That is why it is so difficult to roll out the dough. By the way, when the cake reaches diameter 20 centimetersUsing a pastry brush, grease its surface with olive oil.

When the layer is ready, we turn it several times and use a knife to chop thin strips across. When we turn them around, we get long noodles. Now we spread it all over the kitchen table and leave it for a while so that it can dry out. But the good news is that the product from such a dough wears very quickly and does not stick to each other, and this is important!

Attention:
from the number of ingredients indicated in the recipe, it turns out 150 grams of noodles. For the soup, however, we need from the total 2/3 partsbut if anyone loves more, then feel free to add everything.

Step 4: Cook the chicken stock.


The chicken leg is thoroughly washed under running warm water and spread in a large pan. Completely fill the component with cold liquid from the tap and put on medium heat. Attention: so that the water boils faster, cover the container with a lid. As soon as this begins to occur, foam forms on the surface of the liquid. Be sure to remove it with a slotted spoon and throw it into the sink. It’s definitely not useful to us, because otherwise it will make our broth muddy, and we don’t need this. Now pour a couple of pinches of salt, a few peas of black pepper into the pan, mix everything thoroughly with a tablespoon and fasten the burner. Let the broth boil for 20 minutes, and in the meantime we will prepare the remaining ingredients.

Step 5: prepare the onion for the chicken stock.


Using a knife, peel the onion from the husk and rinse well under running warm water. Next, pierce the component with several cloves, move it to a clean plate and for now leave it alone.

Step 6: prepare the carrots.


Using a vegetable cutter, peel the carrots from the peel. Then we wash the vegetable under running warm water to wash off the remnants of the earth and other dirt and put it on a cutting board. Using a knife, finely chop the component into cubes, stripes or half rings. What form the carrot will have does not have the slightest significance, because in soup it will still boil well and give its taste and aroma. Pour the chopped vegetable into a free plate.

Step 7: prepare the parsley.


We wash the parsley under running warm water, shake off excess liquid and put it on a cutting board. Finely chop the greens with a knife and immediately pour it into a clean saucer. Attention: adding this component during the preparation of the soup is completely optional. I usually sprinkle the dish with parsley just before serving.

Step 8: Cooking Chicken Noodle Soup


When the broth is boiled for 20 minutes, add the whole onion, as well as the dried roots of parsley and celery. Having mixed everything again with a tablespoon, we continue to prepare additional 15 minutes. Important: the lid is not completely closed so that the broth does not cloud.
After the allotted time, put the chopped carrots in the pan and let it boil about 10 minutes.

Next, with the help of a fork, we carefully pull out the chicken ham and the onion with a slotted spoon (it will no longer be useful to us). During this time, the meat should already become soft and tender. We spread it on a cutting board and let it cool to the temperature at which we can touch the chicken with clean hands. As soon as possible, we separate the pulp from the bone and be sure to discard the skin (it seems to me that in such a soup it is not entirely appropriate, but it’s all a matter of taste). Now put the pieces of meat back into the pan and let it cook for 2-4 minutes.

At the end, add noodles to the soup and prepare additional dishes. 5-6 minutes. After the allotted time, we turn off the burner and we can start serving the dining table.

Step 9: serve the chicken noodle soup.


Using a scoop, pour chicken soup into deep plates, sprinkle with finely chopped parsley, and serve with sliced ​​bread at the dinner table. What delicious, satisfying and very fragrant it turns out! Well, you’ll just lick your fingers!

Recipe Tips:

- to prepare the broth, you can take any part of the chicken. For example, it can be just shanks with wings or even a breast. True, from the last broth it will not be enough;

- if you want the soup to be even more satisfying, then add a couple of potato tubers to it;
