Cooking brownie with cottage cheese and cherries:

Step 1: prepare the butter.


Put the butter on a chopping board and chop it with slices using a knife. Attention: it is better to get the component out of the refrigerator in advance so that it becomes slightly soft. Next, transfer the pieces of butter into a small bowl and immediately proceed to the preparation of chocolate.

Step 2: prepare the cherry.


Since our cherries are frozen, be sure to get it out of the refrigerator and put it in a deep bowl. We leave for some time the berries aside so that they independently reach room temperature. Attention: in no case accelerate this process with a microwave or a stream of hot water.

Step 3: prepare the dark chocolate.


We spread the chocolate on a cutting board and, using a knife, chop into medium slices. Spread the crushed component in a bowl with butter.

Step 4: prepare a creamy chocolate mass.


We fill the small pan halfway with ordinary cool tap water and set it on a big fire. To make the liquid boil faster, cover the container with a lid. Immediately after that, we fasten the burner to the maximum and gently put a bowl of chocolate and butter on top of the pan. Important: the top container should never come in contact with boiling water. Constantly stirring the ingredients, melt them in a water bath. So that the bowl does not turn over, be sure to hold it with the help of kitchen gloves. As soon as we get a homogeneous liquid mass, turn off the burner, and set the container with the contents aside. Let it cool slightly.

Step 5: prepare the egg-sugar mixture.


Using a knife, break the shell two eggs, and pour the yolks with proteins into a clean medium bowl. Add vanilla sugar and 50 grams ordinary, as well as a pinch of salt. Using a mixer, beat everything at high speed until a thick, homogeneous mass is formed.

Step 6: prepare the curd cream.


Put the cottage cheese in another medium bowl, as well as the remaining sugar and eggs. Using a blender, beat all the ingredients until a beautiful, uniform mass is obtained from them. This will be our curd cream.

Step 7: prepare the flour mixture.


To make the dough very tender and airy, we need to sift the flour. To do this, pour the component into a sieve and perform the necessary action directly on a clean deep bowl. So the flour will be saturated with oxygen and get rid of excess lumps. And this is what we need!
Now pour the baking powder for the dough into the container and mix everything well with a tablespoon until smooth.

Step 8: prepare the dough for the cake.


Pour the cooled melted chocolate with butter into the egg-sugar mixture and gently but thoroughly beat with a mixer at low speed. We should get a homogeneous liquid dark coffee mass.
Next, pour the flour mixture here and at the same time continue to whip everything with improvised tools at low speed so that lumps do not form. Attention: You can also use a spatula. We should get thick chocolate dough.

Step 9: cook brownie with cottage cheese and cherries.


Cover the bottom of the deep baking dish with parchment. Then grease it and the walls of the container with a small piece of butter. Pour here 1/3 part chocolate dough and, using a tablespoon or a spatula, level its surface. Gently spread half the curd cream on top. Attention: this is quite difficult to do, since the mass is viscous in consistency. Therefore, if everything is not perfect for you, do not be discouraged, I myself have suffered for a long time, but such a cake is worth it. We try to evenly spread the cream on top of the dough and after that we spread several berries of cherries on it (approximately 1/2 part of the total mass). Now repeat all the layers again. At the end we spread the remaining third part of the dough, trying to cover it with cottage cheese with cherries.

Turn on the oven and heat it to temperature 180 degrees. Immediately after that, put the form on a medium level and bake Brownie for 40-50 minutes until a golden crust appears on the surface. At the end we turn off the oven, and we take out the container with the help of kitchen tacks from there and set it aside. When the cake cools down, carefully shift it from the mold onto a special flat plate.

Step 10: serve Brownie with cottage cheese and cherries.

Recipe Tips:

- To prepare the cream, use soft cottage cheese, that is, a special homogeneous mass (usually sold in the store) by consistency as a fudge. If you didn’t have such a component at hand, do not be discouraged, because with the help of a blender you can turn ordinary granular curd into something like that. The only thing I advise is to take homemade cheese, as it goes an order of magnitude fatter and softer;

- for the preparation of the dough, try to use wheat flour only of the highest grade, fine grinding and a proven brand;

- if you can lay out the layers in a baking dish without any difficulties, then you can possibly make stains on the surface of the cake. So Brownie is even more beautiful.
