Cooking cookies from cottage cheese "Triangles":
Step 1: prepare the butter.
To prepare the dough, first we need to bring the butter to a soft state. Therefore, we take it out of the refrigerator and put it on a cutting board. Using a knife, we cut the component into several parts and immediately move it to a clean saucer. Leave for a while aside so that it can become room temperature. Important: we don’t speed up this process with a microwave or a water bath, this can harm the structure of the component, and cookies just won’t work out.
Step 2: prepare the flour mixture.
Pour the flour into a sieve and sift it over a medium bowl. This must be done so that the component is saturated with oxygen and get rid of excess lumps. Then the dough after baking will turn out beautiful and tender. Next, add the baking powder to the container and mix everything well with a tablespoon until smooth.
Step 3: prepare the curd dough for cookies.
When the butter becomes room temperature, put it in a clean small bowl. Add cottage cheese here and carefully grind everything until a homogeneous mass is formed using a fork. Now in small portions we begin to sprinkle the flour mixture and continue to knead everything with improvised inventory.
When the dough becomes more or less dense, move it to the kitchen table, crushed with a little flour. We continue to knead the mass with clean hands until it becomes dense and stops sticking. Attention: add some more flour if necessary. Next, we give the test the shape of a ball, wrap it with cling film and put it in the refrigerator to insist for 30 minutes.
Step 4: make cottage cheese cookies.
When the dough is infused, we take it out of the refrigerator, free it from the cling film and put it on the kitchen table, crushed with a small amount of flour. Using a rolling pin, we roll out the solid mass into a layer thick no more than 5 millimeters.
Now pour sugar into a deep bowl and proceed to the formation of cookies. Using a glass, squeeze the circles on the cake and for now leave it aside. From the scraps of dough we again form a ball and roll it again. Repeat the procedure from start to finish until the elastic solid mass ends.
When all the circles are ready, take turns dipping them on one side in sugar. Then we fold them in half (the side on which the last component is located). Now again dipped them on one side and again we turn it into a book. That is, subsequently we should get volumetric triangles.
Then cover the baking sheet with baking paper. We spread cookies on it, for the last time dipping it with one side in sugar. Important: Of course, so that the pastries do not burn during the cooking process, you should put it with the sugar side up. By the way, the distance between the cookies should be not less than 3 centimeters, since at high temperatures it should increase in size.
Turn on the oven and preheat it up to 200 degrees. Immediately after that, put the pan on a medium level and bake cookies for 15 minutes until golden brown appears on the surface. Attention: I advise you to check the pastries from time to time so that it does not burn at the base. To do this, using kitchen tackles, we take out a container and, slightly raising the cookies with a kitchen spatula or tongs, we see how ready it is. If the pastry is already browned, then turn it over to the other side and put it in the oven again. At the end, turn off the burner in the oven and open the door. Let the cookies stand there for a couple more minutes. Next we get the pan and set it aside.
Step 5: serve the cottage cheese cookies.
We transfer still warm cookies from cottage cheese from a baking sheet to a large special plate and serve it with a dessert table along with tea or coffee. The pastries are so delicious that you should not be surprised if after a couple of minutes the dish becomes empty (even without crumbs).
