Preparation of frozen caviar:

Step 1: prepare the mushrooms.


First of all, we go to the store or to the market and choose fresh favorite mushrooms for ourselves. We bring them home, send them into a deep colander and rinse thoroughly under trickles of cold running water from sand, as well as any other contaminants. Then leave in the sink for a few minutes so that the glass is excess moisture. Further preparation of mushrooms depends on their variety, in the former it is necessary to remove the top layer of the skin from the hats, in the latter to clean the legs, in the third to remove the pores, some should be soaked for two or three days before cooking, and if you use ordinary mushrooms or oyster mushrooms, then everything just rinse and go directly to the second step. We will take honey mushrooms, so we remove each thin film under the hat, get rid of the roots, send the forest beauties into a deep bowl with salted water and leave them on 30-60 minutesso that any living creatures come out of them, for example, small bugs or worms, they love such mushrooms very much.

Step 2: cook the mushrooms.


After the right time, honey mushrooms are washed again, sent to a deep saucepan, filled with the required amount of purified water, so that it completely covers them, add salt there at the rate of 1 tablespoon per 2 liters of liquid and put everything on high heat. After boiling cook mushrooms 5 minutes until foam, then change the water to clean, bring it to a boil again and maintain this ingredient with medium drilling 15 minutes, although the duration can vary from 12-15 to 60 minutes, depending on the variety of mushrooms. Then again we discard honey mushrooms in a colander and leave it in it until use, so that the glass is excess moisture and they cool slightly.

Step 3: chop and freeze the mushrooms.


When the mushrooms cool, slightly squeeze them out of the hands with water and chop them in any convenient way, for example, using an electric or stationary meat grinder, blender or food processor. The main thing is that this kitchen equipment is clean, but in general, preferably treated with boiling water! After that, with the help of a tablespoon, we lay out the resulting thick gruel or mashed potatoes in plastic bags or plastic containers and send it to the freezer before use. Caviar, in principle, is ready, but as you can see, it is done only with the addition of salt and in the future requires additional processing, which we will tell you about in the next step.

Step 4: prepare frozen caviar.


So, you decided to pamper your family with mushroom caviar and you have a frozen semi-finished product in the refrigerator. We get it, print it out, put it on a well-heated pan and add a little purified water there, that's enough 70-80 milliliters. After about 5-6 minutes the mixture will begin to thaw and stew. We are waiting for all the moisture to evaporate, season the eggs to taste with vegetable oil, lemon juice, 9% or 3% vinegar, salt, black pepper or other favorite spices and stew 2-3 minutes. Then remove the aromatic dish from the stove, cool to room temperature and serve on the table in a bowl specially designed for this purpose.

Step 5: serve the frozen mushroom caviar.


Frozen mushroom caviar is an excellent semi-finished product that will be useful to any housewife. After additional heat treatment, the aromatic mixture is seasoned to taste with vegetable oil, vinegar, spices, cooled and served in a salad bowl as an appetizer or side dish, optionally pre-decorated with sprigs of fresh green dill, parsley or cilantro. Recipe Tips:

- in stewed and seasoned caviar, you can add finely chopped and fried onions, carrots, fresh garlic, stewed tomatoes or bell pepper salad squeezed through a press;

- very often mushrooms are boiled with spices, for example, all kinds of pepper, bay leaves, lemongrass, sage or other spices;

- very often mushrooms are not boiled, but crushed raw and frozen, but in the pan such caviar is cooked longer, it must be stewed for about 30 minutes in a small amount of water and only after that another 10 minutes in seasoned form;

- such caviar can be stored in the freezer for 4 months or longer.
