Making Chocolate Nut Cake:
Step 1: prepare the nuts.
Today we will make a cake without using flour. Instead, nuts will serve us. But before preparing the dough, we need to grind them. Pour almonds and hazelnuts into the blender bowl and leave them aside for a while.
We lay the walnuts on a cutting board and, so that it is easier to chop, with a knife we cut into several pieces.
We pour this component into the total capacity and chop everything at a high speed to the state of small-fine crumbs.
Pour chopped nuts into a small bowl.
Step 2: prepare the chocolate.
We spread the chocolate on a cutting board and use a knife or clean hands to break it into pieces. Attention: To prepare the cake, both the milk and black components are suitable. The only thing, the latter will give barely noticeable bitterness in baking. My household likes black chocolate more, so I usually use it. So, to grind it, a coffee grinder and a blender will do. This is at your discretion. I use the first and second inventory according to my mood.
The main thing is that chocolate turns into almost flour chips. Pour the crushed component into a clean small bowl and leave it aside for a while.
Step 3: prepare the lemon.
Using a juicer, squeeze out all the juice from the lemon. Attention: to make a cake based on the ingredients specified in the recipe, we need 1-2 teaspoons citrus fluid.
Step 4: prepare the egg-sugar mixture.
Using a knife, break the eggshell, and pour the yolks with squirrels into a medium bowl. Pour salt and sugar here and, using a mixer, beat the ingredients at high speed until a strong lush foam is formed. Pour freshly squeezed lemon juice into the container and again mix everything thoroughly until smooth. The last component is necessary in order to hold together the mass, which will serve as the basis for the test.
Step 5: prepare the dough for the cake.
In a bowl with egg-sugar mixture, carefully and in small portions pour the nut mass and chocolate flour and immediately mix everything with a tablespoon until smooth. We should get a liquid dough.
Step 6: bake the cake.
Cover the bottom of the baking dish with parchment. Next, pour the dough here and level its surface with a tablespoon. Attention: so that the cake does not burn, the container must be tightly closed with food foil. Now turn on the oven and heat it to a temperature 180-200 ° C. Immediately after that, put the form on a medium level and bake the cake for 30-40 minutes. Important: we do not open the oven during baking, as the cake can settle. After the allotted time, turn off the oven, but we do not get the form, and let the test cool completely to room temperature. The only thing is, you can slightly open the door to speed up the process.
At the end we take out the container and put on a cutting board. The edge of the knife is drawn along the walls of the mold, so that it is easier to get the cake out of it. Now remove the baking paper from it and put it on a flat serving dish. Without hesitation, we proceed to the preparation of the cream.
Step 7: prepare the cream for the cake.
To make the cream viscous and airy, be sure to cool the cream in advance. To do this, use a refrigerator. Then pour the component into a deep bowl and add the icing sugar here. Using a mixer, beat everything until we get a lush, dense mass. At the end, for the aroma, you can add a little cognac and mix everything again until smooth. Everything, the cream is ready!
Step 8: make a chocolate nut cake.
Using a tablespoon, apply cream to the surface of the cake. If desired, the base with a knife can be cut lengthwise into two parts and greased each. If the cream still remains, then apply it on the side of the cake. Everything, the pastries are ready, we can serve a dessert table! Attention: if you still have some nuts, then decorate the cake with them.
Step 9: serve the chocolate-nut cake.
Chocolate-nut cake turns out to be unusually tasty and interesting. Due to the fact that flour is not included in its composition, the structure of the cake is somewhat different from that of ordinary standard baking.
