Diet Cheesecake

Ingredients for Making Diet Cheesecake

For the basics:

  1. Cookies (anniversary or shortbread) 180 grams
  2. Apple juice (sugar free) 50 milliliters (Agusha or Nestle)

For filling:

  1. Cottage cheese, fat-free 0% 500 grams (creamy, without grains)
  2. Natural fermented milk yogurt 1 or 0% fat content 350 milliliters
  3. Chicken egg 1 piece (large)
  4. Sugar 4 tablespoons
  5. Lemon zest 1 tablespoon
  6. Vanilla Sugar 1 tablespoon
  7. Corn starch 2 tablespoons

Measuring cup, kitchen scale, round non-stick baking dish with a removable side (diameter 20-23 centimeters), baking or parchment paper, kitchen scissors, aluminum foil, blender, deep bowl - 2 pieces, tablespoon, freezer, oven, grater, mixer, silicone kitchen spatula, deep pan, kitchen knife - 2 pieces, plastic wrap, refrigerator, large flat dish, kitchen spatula, dessert plate.

Cooking Diet Cheesecake:

Step 1: prepare the baking dish.

First of all, we take baking or parchment paper, using ordinary kitchen scissors, cut out a circle the size of a non-stick detachable baking dish with a diameter of 20-23 centimeters from it and put it on its bottom so that it lies flat. Then we put this dish on a large sheet of aluminum food foil folded in two layers, lift its ends up and wrap the outer sides of the sides with them, leaving no gap!

Step 2: prepare the cookies.

Then we break the anniversary or similar low-calorie shortbread cookies into small pieces and send them into a clean, dry blender bowl. We turn on the kitchen appliance at the highest speed and shred this ingredient into small crumbs, although small pieces are allowed. This process will take no more than 2 minutes, as soon as everything is ready, move on.

Step 3: prepare a mixture of cookies and apple juice.

Pour crushed cookies into a deep bowl and pour apple juice without sugar into the same bowl; the perfect option is Agusha or Nestle. We mix everything with a tablespoon until a homogeneous consistency, as a result, a slightly loose, but at the same time plastic mass resembling dough should be obtained. We shift it into the prepared baking dish, distribute along the bottom, as well as the walls of this dishes, forming low sides no longer than 5 centimeters long, and send the base from the cookies to the freezer on 15-20 minutes.

Step 4: prepare the filling.

Do not lose a minute, turn on and preheat the oven up to 170-175 degrees Celsius. Then we put fat-free soft cottage cheese without grains in a deep bowl, pour in the same sour-milk yogurt without additives, put one chicken egg without shells, chop a tablespoon of lemon zest on a fine grater and pour two types of sugar: plain sand and vanilla.
Beat these ingredients with a whisk or mixer at medium speed until a homogeneous consistency. Then pour the corn starch into the resulting mass and shake everything thoroughly again - the filling is ready! It turned out to be more liquid than on a regular American cheesecake, but it’s not scary, calmly proceed to the next step.

Step 5: form and bake a diet cheesecake.

We take out the form with the base of the cookies from the freezer and carefully spread the filling into it, while leveling it with a tablespoon or a silicone kitchen spatula. After that, put the dishes with the formed dessert on the bottom of the deep pan and pour in it the usual running water, so that it reaches half the level of the cheesecake.

Now we check the temperature of the oven and, if it has warmed up, we put the resulting structure there on the middle rack. Bake yummy curd over 1st hour, although maybe a little more time will be needed, it all depends on the features of the oven.
If you have convectionthen the temperature can be reduced up to 150 degrees Celsiusso that the base of the cookies does not dry out, but in this case the cheesecake will be baked for about 1 hour 15-20 minutes.

Step 6: bring the diet cheesecake to full readiness.

As soon as the dessert is ready, and this can be seen on the upper even and fairly elastic crust, turn off the oven and leave the baking in it for a couple more hours, let it cool down there. Then carefully rearrange the dishes with cheesecake on the countertop and wet a small thin knife in the water.

We draw it with a point between the sides of the form and the base of the American pie, carefully separating the already curd mixture from the metal.

Without taking it out, we tighten this yummy with plastic wrap and send it to the refrigerator by 4-8, and preferably 10 hours.

My cheesecake is slightly donkey, but it didn’t affect the taste, after insisting it became more dense, and the whole family tasted it with pleasure!

Step 7: serve a diet cheesecake.

Diet cheesecake is served cold. After insisting, the side is removed from the mold, slowly dragging the dessert onto a large flat dish and dividing into 8-10 portions.

They are laid out on plates, optionally supplemented with jam, jam, condensed milk, liquid caramel, cream, fresh berries or fruits and served with hot or cold drinks, such as coffee, tea, cocoa, milk or whatever you like. Enjoy and enjoy delicious food!

Recipe Tips:

- if desired, sugar substitute can be used instead of granulated sugar, it will make cheesecake even more dietary;

- an alternative to lemon peel - orange, a couple of tablespoons of any mashed fresh berries or liquid fruit essences;

- if your oven has strong top heat, cover the baked dessert with a sheet of aluminum foil so that the crust does not burn;

- For the filling, not only store-bought, but also homemade yogurt is suitable.
