Cucumber and Pepper Salad


Ingredients for making cucumber and pepper salad

Cooking cucumber and pepper salad:

Step 1: prepare vegetables and herbs.


Such a salad will appeal to everyone who wants not to consume extra kilocalories. So, first, using a kitchen knife, cut off the caps at each end of each cucumber and, if desired, peel the fruits, and sweet bell pepper we remove the stalks and gutting the seeds. Then we wash them with your favorite greens under the trickles of cold running water, dry them with paper kitchen towels, put them on a cutting board one by one and continue the preparation. Dill or parsley finely chopped.

We cut cucumbers and pepper as we like, for example, in cubes or straws, but it is desirable that the slices are small in size and thickness, up to about 1 centimeter, in which case it will be much more pleasant to enjoy the ready-made meal.

Step 2: prepare olives and other ingredients.


Now, using a regular canned key, open a jar of seedless olives, drop them into a colander and leave them in the sink for 3-4 minutes so that the glass gets excess liquid. After that, put the marinades on a clean board and take turns cutting each berry into 2-4 parts or chop with rings, half rings or their quarters. Then we put the remaining necessary ingredients on the countertop and proceed to the next final step.

Step 3: bring the cucumber and pepper salad to full readiness.


In a deep bowl we put chopped cucumbers, olives, sweet pepper and dill or parsley. Season everything to taste with salt, olive oil and mix with a tablespoon to a homogeneous consistency. Next we give the salad stand at room temperature 3-4 minutes for the vegetables to start juice and then serve to the table.

Step 4: serve cucumber and pepper salad.


After cooking, the cucumber and pepper salad is slightly insisted and then served at room temperature in specially designed dishes or in portions on plates. If desired, before serving, it is supplemented with a small amount of fresh herbs and plates on the table with sour cream, cream or mayonnaise, maybe some gourmets of olive oil will not be enough, and they would prefer a more fat dressing. Recipe Tips:

- such a salad turns out to be very rich and light, but you can argue about some ingredients, for example, just replace them with others, olives with olives, capers, pickled or pickled cucumbers, olive oil with vegetable, sour cream or cream;

- to make the dish more nutritious, very often they add boiled chicken, boiled cheese, hard cheese, Feta or cottage cheese, as well as beef, pork, chicken or turkey meat;

- in addition to dill and parsley, use cilantro, green onions, basil or fresh leaves of lemongrass;

- if desired, the salad can be seasoned not only with salt, but also with allspice or dried herbs: thyme, barberry, fenugreek and others.
