Cooking cucumbers for the winter:

Step 1: Prepare the cucumbers.

Choose cucumbers suitable for preservation. They should be fresh, not flabby, and the skin should be without damage. Rinse selected cucumbers and soak in clean water on 6-8 hours or at night.

Step 2: Prepare the spices.


Peel the garlic and cut into thin slices.
Wash greens and shake from excess moisture.
For bell pepper, remove the seed core and leg. Chop it in small and thin slices.
Rinse the horseradish root, peel and chop in circles.

Step 3: Pickle the cucumbers.


At the bottom of a previously prepared and sterilized jar, lay one twig or leaf of prepared greens, as well as 1-2 slices of chopped horseradish root, a bay leaf and a couple of pieces of garlic. Then lay cucumbers tightly to each other, but not until the end of the can, but, approximately, until the middle. On them, add slices of bell and hot pepper, another clove of garlic and horseradish, a sprig of dill and celery. On top of all this is another layer of cucumbers, and on top of them are the remaining spices. Pour a jar of cucumbers with cold water and salt and let it brew 2-3 days in a cool dark place, at room temperature.
After a white foam forms on the surface, it is necessary to drain the brine from the can. Pour it into a deep pan and bring to a boil. Boil it 3-5 minutes and, not allowing to cool, carefully, return to a jar with a thin stream. Roll up the lid, wrap with a towel and turn upside down. In this position, allow the jar to cool as well. 1-2 days. Turn the prepared cucumbers in their usual position and store them like other preparations in a cool place inaccessible to the sun.

Step 4: Serve the cucumbers.

Serve the prepared cucumbers to the table as a snack, putting them in a small bowl, whole or chopped, and also use to prepare salads.

Recipe Tips:

- In some recipes tarragon, cloves and allspice are also used as seasonings.

- This recipe indicates a greater amount of liquid and salt than is necessary in the end, but this is done taking into account the fact that some of the brine will evaporate when boiled.

- Carefully watch the cucumbers when you leave them in the brine for the first time, do not miss the appearance of foam, otherwise mold may appear.
