Caramel ice cream


Caramelize 100 g sugar,

Caramel Ice Cream - Recipes

Let me sweeten you. What could be more appropriate on a beautiful summer day than Homemade caramel ice cream& # 8230 or maybe a mint lemonade but maybe in a future post (hmmm, good idea!). I also added a drop of caramel & # 8230 a bigger drop which is true for a more intense flavor. Ingredients for 4 servings:

  • 300g old
  • 400g fat cream
  • 250ml fat milk
  • 3 eggs
  • a teaspoon of vanilla extract

Transfer the caramel sauce to a bowl and allow to cool, then refrigerate for a few hours.
For the vanilla cream, heat the milk with the rest of the cream and the rest of the sugar until it is close to frothing. Separately, lightly beat the 3 eggs over them, pour half of the milk mixture, stirring constantly, then transfer everything to the pan and keep it on the fire until the cream starts to harden (do not let it boil). Extinguish the fire, add vanilla, mix well and transfer to a bowl (if you think it has lumps, you can pass the cream through a sieve) which will also go in the refrigerator for a few hours.

Put cold vanilla cream and half of the caramel cream in the container of the ice cream machine (you can put more for a more intense taste, the idea is to keep the caramel for topping). Follow the instructions of the ice cream machine. If you do not have such a thing, it is nothing, put the mixture in a metal container (preferably metal because it freezes easily) and put in the freezer stirring with a fork every 30-45 minutes 3-4 times to no large ice crystals are made in ice cream.

Banana and caramel ice cream

I think it's no secret that the simplest and lightest ice cream that can be made at home is a single ingredient, ie banana ice cream. Effectively freeze the broken bananas into pieces, then pass them through a blender and serve them so you don't feel like banana-flavored ice cream in the shop windows. I ennobled this ice cream with some condensed caramel and it turned out really delicious.

Sweetened condensed milk is one of the most commonly used methods for preserving milk, the product being very popular and appreciated in all corners of the world.

There are many recipes with condensed milk, both simple recipes for cakes and complex recipes for cakes or cream cakes.

A very sought after and delicious dish based on condensed milk is dulce de leche which, in fact, is a thick, consistent and very sweet caramel. It is found in canned form and is prepared by boiling sweetened condensed milk over low heat. Dulce de Leche it can be simply consumed or it can be added in recipes in the form of cream for cakes or cookies, topping ice cream / fruit salad, or for a different taste in rice pudding. Store in the refrigerator and consume in 2-3 days.

Ingredients Vanilla ice cream

  • 2 yolks

  • 1 pinch of salt

  • 2 natural vanilla pods

Preparation Vanilla ice cream

1. The vanilla pods are grown lengthwise and the seeds are scraped with the tip of a knife. The vanilla seeds together with the pods are put in a saucepan together with the milk. Heat the milk on the fire until it sticks to the surface and is about to boil. Remove the pan from the heat and cover with the lid. Let it rest for 30 minutes, to infuse the vanilla in the milk and make sure we get a fragrant vanilla ice cream.

Remove the vanilla pods after the infusion time. You can also strain the milk to remove the vanilla seeds, which I sometimes do, otherwise my family reproaches me for making & # 8222 ice cream with ants & # 8221.

2. During the rest of the milk with vanilla, in a large bowl beat eggs and yolks with salt powder and all the sugar until a thick cream is formed.

3. The strained milk is poured back into the pan and heated on the fire until it starts to boil.

Pour the hot milk over the egg cream, little by little and beating constantly, until it is completely incorporated. Transfer the milk cream and eggs to a saucepan and put on low heat, stirring constantly, until it thickens enough to cover the spoon with which it is mixed.

4. Pour the fluid cream obtained in a large bowl, let it cool a little and add the whipped cream (unsweetened and unsweetened), stirring until well blended. This is the basic composition for vanilla ice cream, which is left to cool to room temperature, then refrigerated for at least 1-2 hours, preferably overnight.
