Strawberry Brownie with Vanilla Mascarpone Cream


What a long name for such a simple, yet refined cake, I would say. The original cake is covered with a lemon glaze, but I wanted to create something much more special and I combined it with a light mascarpone cream and vanilla flavor. To my surprise, I received a lot of appreciation and that can only make me very happy. More than likely it will be on the list of holiday cakes.
And because it is a super delicious cake, I decided to come with it to you and celebrate together the recipe with no. 100! :)

  • Brownie Ingredient:
  • 240 gr butter / margarine
  • 80 gr dark chocolate
  • 120 gr milk chocolate
  • 500 gr strawberry jam
  • 150 gr sugar
  • 100 gr brown sugar
  • 4 eggs
  • 275 gr flour
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Cream ingredient:
  • 200 ml fresh
  • 125 gr mascarpone
  • 1 teaspoon grated vanilla powder / seeds from 1 pod

Preparation time: less than 60 minutes

RECIPE PREPARATION Strawberry Brownie with Vanilla Mascarpone Cream:

Melt the butter over low heat, add the two types of broken chocolate pieces and mix until they melt as well. Remove from the heat and add the strawberry jam and salt. Separately mix whole eggs with the two types of sugar. In the egg composition add the chocolate mixture, mix well and gradually incorporate with a spatula flour previously mixed with baking powder. You can adjust the amount of flour because it depends on the consistency of the strawberry jam. If it is thinner, you may need a little more flour, and if it is thicker, you will have to lose weight.

Pour the composition thus obtained in a tray lined with baking paper and put in the preheated oven for 40-45 minutes, but for safety do the toothpick test.

Let it cool completely and in the meantime prepare the cream.


Mix the whipped cream at high speed, until it becomes stronger, reduce the speed to a minimum and incorporate the mascarpone, respectively vanilla powder.

Spread evenly over the cooled top and powder with cocoa.

STRAWBERRY SEASON !! When you're an avid baker, it's certainly something to celebrate. I have been obsessing over how pretty the strawberries have been in the grocery store, and so of course I jumped at the chance to make something fancy with them. I & # 8217m still enamored with the naked layer cake look, so I decided to make another naked strawberry layer cake, but this time with sponge cake layers and a more rustic design on top. Thankfully even though it looks fancy, naked cakes are some of the easiest ones to make & # 8211 this one included!

My parents didn & # 8217t do a lot of homemade baking growing up, but one dessert that we often had was strawberry shortcakes. We bought the sponge cakes that came in the little packages by the produce section and definitely used Cool Whip instead of real whipped cream, but I loved it all just the same. I made this cake for my Dad & # 8217s birthday last weekend as an ode to our family favorite, but with a homemade Sweet Tooth spin. And since it was just a birthday celebration with our immediate family, I opted for a 6 & # 8243 cake with three layers to get maximum height and drama without making a ginormous cake. I loved the way it came out!

I tried a from-scratch sponge cake recipe for this creation, but you could very well use a vanilla cake mix to achieve a similar look and taste. And as I mentioned above, I don & # 8217t discriminate against Cool Whip if that & # 8217s your thing. But a few minutes in a mixer with just a bit of sugar and vanilla makes for some pretty special homemade whipped cream! Give it a try and let those beautiful strawberries shine as they should this time of year :)

Mascarpone and Strawberry Galette

Normally when each Sweet Adventures Blog Hop comes around I make something decadent and a little over the top, like my Black Dahlia Cake. This time though I wanted to go down the rustic path and make something a little more simple. I also wanted to make it sugar free too.

I've been experimenting with using Brown Rice Syrup as a sugar substitute for some time and the results so far have been fantastic, especially when it comes to muffins, but I'd yet to try it in a pastry recipe. I'm pleased to report it worked wonderfully. I also substituted white flour for wholemeal, which gives the strawberry galette a lovely crumbliness and which I think adds to the overall rustic quality.

While I could have gone with a completely fruit laden galette I ultimately decided upon a mascarpone base. When baked, it somewhat resembles a set custard. The creamy base makes it perfect on it’s own, without the need for cream or ice cream, as the tart is really not that sweet with the only sweetness coming from the fruit, but feel free to add them if you like. While I highly recommend using mascarpone as it really makes this cake, if needed you can replace it with additional cream cheese, it just won & # 8217t be quite as rich and smooth. You can also use a combination of half cream cheese and half drained ricotta cheese.

Where do you buy mascarpone cheese?

Usually you can find mascarpone near the deli aisle, not with the cream cheese. Or if your grocery has a specialty cheese section, look there. A common brand is BelGioioso. Here is a photo so you know what to look for.

How To Make Chantilly Cake

To make this delicious cake, start by mixing up your cake batter then baking in round cake pans. Next a simple syrup is prepared, which will be poured over the cake after baking.

Strawberry Brownie Trifle Recipe

Valentines Day recipes are some of my favorites because they are sweet, delicious, and cute!

While Valentines Day recipes may make you think of chocolate, it generally makes me think of red berries like raspberries, strawberries, or cherries and clouds of fluffy cream.

What could be better than recipes that actually combine chocolate, berries, and clouds of whipped cream?

What types of berries should I use?

This Strawberry Brownie Trifle recipe can be made with either red raspberries or strawberries. Since my store didn't have any red raspberries when I shopped this week, I decided I would create it with delicious, red strawberries instead.

You could even use blueberries or peaches if you prefer instead of raspberries or strawberries.

Origins of this dessert

This recipe in English cuisine is made with fruit, a thin layer of sponge cake soaked in sherry, and custard. It can be topped with whipped cream.

But, this recipe is even better than the original dessert and much simpler to make. While I serve it often around Valentine & # 8217s Day, you can enjoy it any time of the year.

Best brownies for this recipe

The brownies in this recipe can be made from scratch, purchased, or made from a boxed brownie mix. If you & # 8217re gluten intolerant, make sure that you pick up a box of gluten-free brownies to start with as your base for this brownie strawberry dessert.

I can find these regularly in my grocery store and they are so good that everyone in my family enjoys them & # 8211 even those that aren & # 8217t gluten intolerant. You can use ready-made whipped topping or create your own from scratch.

It all depends on how much time you have to devote to creating your Valentines trifle.

FAQ & # 8211 Strawberry Brownie Trifle

Vanilla pudding trifle

If you would rather use vanilla (or chocolate) pudding instead of whipped cream in this recipe, you can certainly do that. Just use your favorite homemade recipe or boxed pudding mix.

If you would prefer not to serve this in dessert glasses, you can simply cut a slice of brownie and top with berries and whipped cream. Brownies with strawberries and whipped cream still make a decadent dessert.

Individual Valentine puddings

If you like Valentine mini desserts, you can easily serve this in small glasses like 4-ounce crystal jelly jars. Just place one brownie in the bottom and top with fresh berries and fluffy layers of cream.

Can I make this ahead of time?

If you want to make this Valentines Trifle ahead of time, I would bake the brownies and cut them. Then, you can assemble the rest of the ingredients at the last minute.

If you make the whole thing ahead of time, the layers might get soft which wouldn't taste as good.

Can I double this recipe?

Yes, if you want to make this as one large dessert, you can use a larger bowl and layer all the ingredients together. Then, guests can serve themselves.

Can this be frozen?

You can make the brownies ahead of time and freeze them if you like. Just cut them into individual servings and use them within three months.

I would not freeze the rest of the ingredients in this Valentines Trifle.


Ingredients needed

You only need 4 simple ingredients. The powdered sugar will definitely add sweetness to the whipped cream, which you may or may not like. Personally, I prefer it to be sweeter and it balances out the flavor of the mascarpone. It also acts as a stabilizer, so I don't recommend skipping it all together.

  • Mascarpone cheese: be sure it & rsquos nice and cold
  • Heavy whipping cream: this also needs to be super cold
  • Powdered sugar
  • Pure vanilla extract

Can I substitute cream cheese for Mascarpone?

Yes, my recommendation would be to substitute a regular full-fat cream cheese.


Assembling this brownie trifle dessert

Layer the brownies, cream, strawberries and chocolate pudding in the trifle dish (I used a 4 qt dish). Then repeat until you reach the top of the bowl. I also melted some chocolate to make chocolate covered strawberries and also made chocolate curls with the leftover melted chocolate. I found this tutorial for making chocolate curls helpful. I & # 8217ve also found them pre-made in the sprinkles section at Hobby Lobby.

TYPE: Feel free to make this dish a few hours in advance. Simply assemble, cover with plastic wrap and then store in the fridge until ready to serve.
