Mini Cheesecake - with Philadelphia cream cheese


The ingredients must be at room temperature. Finely grind the biscuits with the robot. Add the sugar and melted butter.

I used an 18 cm cake tray. Bake at 160 ° C for 10 minutes.

Add sugar, flour, vanilla and mix well. Add the lemon peel and juice, the egg and finally the cream. Interfere.

Pour in greased form on the edges with butter.

Place a small pan with water on the bottom of the oven.


Put the cheesecake in the oven and bake for 10 minutes at 200ºC, then reduce the temperature to 90 ° C and bake for 20 minutes.

It is ready when the middle trembles like a meatball but the edges are firm.

Leave it to cool in the oven.


Then put it in the fridge in the form for 6-8 hours or leave it in the cold all night.

Prepare the "topping": put the cream, sugar and lemon juice in a small bowl. Mix well.

Pour over the cheesecake and level with a spatula.

Refrigerate for at least an hour.

Serve cold.

I think we all love sweet cheese dishes, probably sweet cheese pie or pancakes are the most popular, not to mention the long-awaited cheesecake that can be prepared in so many variants that I'm sure you have a favorite. Of course, we often buy these products because we don't have time to prepare them, but what satisfaction do we have when we prepare them at home and they come out very tasty, you can't imagine.

Returning to the products with sweet cow's cheese, I discovered an absolutely tasty recipe, a kind of pancakes with a lot of cheese, on their presentation name cheesecakes. They are made with cow's cheese but be careful not the creamy one like Philadelphia, the usual and original one which is a little rougher. The idea is to be as fat as possible, so when you buy it, pay attention to the percentage of fat, which must be at least 25%. Of course, they can be made with weaker cheese, I have already made them in this version as well. And yes, I think they can be made with ricotta, they will definitely be very good.

I have two more tips before writing your recipe: the cheese must be drained well of whey, I put it in a fine sieve and pressed it until it drained well and do not put too much sugar in the composition, possibly the pancakes to spread on frying.

Cheesecakes

With a wet spoon we take from the composition a piece that we put on the table sprinkled with flour and form small cheesecakes (with a diameter of about 8cm). We form them all and then fry them. If you notice that the composition does not bind, add a little more flour, the amount of flour depends on the type of cheese used and how well the whey is drained.

Remove the excess flour and fry the cheesecakes in a little hot oil in a pan covered with a lid. We turn them lightly with a spatula and let them fry on the other side until they turn brown, then we take them out on an absorbent napkin.

Serve hot with powdered sugar and sour cream. They are delicious!

The recipe below is an easy recipe, which is quick to prepare and does not require baking, but only needs to be left in the fridge for a few hours (minimum 3). Amount: 8-10 servings

Ingredient:

  • 250 ml liquid cream for whipping cream
  • 250-300 g cream cheese at room temperature (Philadelphia type)
  • 70 g white sugar
  • 1 teaspoon vanilla essence / seeds from half a vanilla pod
  • 200 g frozen strawberries / raspberries
  • 1 tablespoon white sugar
  • 1 1/2 teaspoons starch
  • 85 ml of cold water

Method of preparation

Melt the butter over low heat and leave to cool.
Crush the biscuits finely with a rolling pin or food processor.
Mix the biscuits with the 2 tablespoons of sugar and melted butter.
The mixture is spread in a tart tray of about 25 cm greased with a little oil and lined on the bottom with baking paper and pressed well by the edges of the tray.


Cover the tray with plastic wrap and refrigerate while the filling is cooking.
Beat the cream cheese and sugar with the mixer on low speed for 1 minute. Add the vanilla and mix a little more.


The whipped cream for whipping cream is beaten in another bowl at high speed, about 3 minutes, until it doubles in volume and does not flow from the phone. Be careful not to beat too much, because it will cut. For optimal results, the bowl and the whip with which you beat the cream are put in the fridge a few minutes before to cool.


Cream and cream cheese mix gently with movements from bottom to top until smooth and then spread over the cookie sheet.


Keep the tray in the refrigerator for at least 3 hours.

For the fruit sauce, in a medium saucepan, mix the sugar and starch. Add water and mix well. Add the fruit and put the pan on medium heat. Stir occasionally until it starts to boil. Reduce heat and simmer for another 5 minutes, stirring almost constantly, until sauce thickens slightly. Remove the pan from the heat and leave to cool. If you use raspberries it is advisable to strain the composition through a sieve because you will have a lot of seeds, if you use strawberries you do not need to strain it, you will get a composition the consistency of a jam. You can also use a vertical blender to get a more homogeneous sauce.

The cheesecake can be served with blueberries or fresh strawberries and berry sauce.

Cum preparam reteta de biscuiti cu crema de branza?

Punem untul intr-un bol impreuna cu zaharul pudra si zaharul vanilinat si le incorporam pe toate cu ajutorul unei spatule sau cu mana.

Adaugam pe rand oul, coaja de portocala,esenta de vanilie si amestecam cu un tel para pana devine o compozitie omogena.

Punem si praful de cacao, amestecam din nou, adaugam praful de copt si la sfarsit faina treptat.

Framantam pana obtinem un aluat omogen care nu se lipeste de maini.

Punem pe blatul de lucru aluatul si deasupra acestuia o bucata de folie alimentara.

Cu un facalet intindem o foaie nu foarte subtire din care cu ajutorul unei forme rotunde vom decupa biscuitii.

Punem biscuitii intr-o tava tapetata cu hartie de copt unsa cu putin unt si ii bagam la cuptorul preincalzit la 180 de grade Celsius pentru aproximativ 10-12 minute.

Cand sunt gata ii scoatem din cuptor si ii lasam sa se raceasca in tava.

Pana se racesc biscuitii de ocupam de crema.

Punem crema de branza si esenta intr-un bol si amestecam pana branza devine pufoasa.

Adaugam si zaharul pudra si amestecam pana se incorporeaza in compozitia de branza.

Intr-un alt bol punem untul, il spumam iar peste el vom adauga crema de branza.

Amestecam energic pana obtinem un amestec omogen peste care vom pune gemul.

Crema obtinuta o bagam la congelator pentru aproximativ 20 de minute.

Dupa ce s-a racit ne putem apuca sa umplem biscuitii.Asadar punem crema pe un biscuit (cu ajutorul unui pos de bucatarie) peste care vom lipi un alt biscuit gol, exact ca la sandwich.

La fel vom proceda si la ceilalti biscuiti pana ii vom termina de umplut.

Acesti biscuiti sunt foarte gustosi,combinatia de cacao si crema usor acrisoara este excelenta.

Tips

  • Inainte de a ne apuca de crema trebuie sa tinem branza putin la congelator.
  • Nu tinem biscuitii foarte mult la cuptor,se coc foarte repede si se intatesc prea rau.
  • Putem pastra biscuitii la frigider chiar si cateva zile dupa preparare.
