Cooking meat casseroles with vegetables:
Step 1: prepare the pork.
We thoroughly wash the pork under running warm water, wipe it with kitchen paper towels and put it on a cutting board. Using a knife, we clear meat from veins and a film. Then cut the component into medium pieces and transfer to a small bowl.
Step 2: prepare the beef.
Rinse the beef well under running warm water to wash away any residual bone fragments. Now we wipe the meat with kitchen paper towels and put it on a cutting board. Using a knife, we clean the component from the veins, grease and film, then cut into medium pieces and transfer to a bowl of pork.
Step 3: prepare the minced pork and beef.
To prepare the casserole, we need to grind the meat. To do this, we use a meat grinder, but be sure to use a shallow grill so that pieces of pork and beef do not come across in the dish. Grind the components directly above the bowl in which they are located. Attention: to make the minced meat homogeneous, pass it through the meat grinder 2 times.
Step 4: prepare the onions.
Using a knife, peel the onion from the husk and rinse thoroughly under running water. Now we lay out the component on a cutting board and finely chop into cubes. Pour the chopped onions into a clean plate and proceed to the preparation of the next vegetable.
Step 5: prepare the carrots.
Using a knife, peel the carrots from the peel and then rinse well under running water. Now, using a coarse grater, grind the vegetable directly on the cutting board. Pour the carrot chips into a free plate and leave them aside for a while.
Step 6: prepare the zucchini.
To prepare zucchini for a dish, you can apply several options for chopping vegetables. The first is to use a coarse grater and grate the ingredients directly above the free small bowl. In this recipe, I usually use this method of chopping vegetables.
Second: put the zucchini on a chopping board, remove the edges with a knife and then cut the component into thin half circles with a thickness no more than 0.5 centimeters.
And the last option is to cut the zucchini into small cubes about the size of 1-1.5 centimeters in length and width. At the end, pour the chopped vegetables into a clean small bowl and proceed to the final stages of cooking.
Step 7: Prepare Hard Cheese
Using a fine grater, grind hard cheese directly on a cutting board. Then we pour the chips into a clean saucer and wrap them with cling film so that the component does not wind off while we make baked goods for casseroles.
Step 8: prepare the meat casserole with vegetables.
In the first pan, pour a small amount of vegetable oil and put on medium heat. When the contents of the container are well warmed up, pour the chopped onion here. From time to time, stirring with a wooden spatula, fry the component for 3-4 minutes. After the allotted time, add minced pork to the pan. Again, mix everything with improvised equipment and continue to fry the mixture until it acquires a pronounced brown color. This will mean that the minced meat is well cooked and you can go to the next stage of cooking the casserole.
Pour the remaining vegetable oil into another pan and put on medium heat. When the contents of the container are well warmed up, put the carrot chips here and mix well with a wooden spatula. Fry the chopped vegetable to a pale golden hue. Immediately after that, add zucchini to the pan and continue to cook the vegetable mixture for another 5-7 minutes. Attention: do not forget to mix the ingredients from time to time with improvised equipment so that they do not burn at the base of the container.
After the allotted time, turn off the burner, and carefully transfer the contents of the container to the middle bowl. We also add fried minced meat with onions, salt to taste and mix everything well with a tablespoon.
Now grease the bottom and walls of a deep baking dish with a piece of butter and afterwards put the mixture here. Level its surface with a tablespoon and then sprinkle with grated hard cheese.
Turn on the oven and heat it to temperature 180 ° C. Immediately after that, put the casserole bowl on the middle level and cook the dish for 20 minutes until a beautiful golden crust appears on the surface. After the allotted time, turn off the oven, and take out the form with the help of kitchen gloves and leave aside. Let the casserole cool slightly.
Step 9: serve the meat casserole with vegetables.
Using a knife, cut the finished casserole into portioned pieces and transfer them, using a wooden spatula, to a special plate. Since the dish is quite substantial, we serve it to the dining table with slices of bread or pita bread.
- for cooking casseroles, instead of zucchini, you can use white cabbage. To do this, it also needs to be ground in advance. In this option, it is best to chop the vegetable on a cutting board with a knife or grate it on a coarse grater (although this way cabbage will give more juice and will hardly be felt in the dish);
- to make the dish sharp, you can add a small amount of ground pepper mixture to it. I also use seasoning such as "hops-suneli" and a little ground coriander;
