Which Cut of Steak Is Best for Grilling?

When I first started working on this recipe, my top contenders for the steak were the ribeye (no bone), the rib steak (same cut as the ribeye but with the bone), the porterhouse, and the T-bone.

Any of those cuts will taste great grilled due to the significant marbling of fat, which leaves the meat tender, and flavorful. Let's take a closer look at each:

  • Ribeyes vs. Rib steaks: A ribeye has the bone taken out a rib steak, also known as a bone-in ribeye, is a ribeye with the bone in. Due to its extensive marbling, this cut cooks beautifully on the grill, bone in or out. Trim the thick fat from the outside edge—leaving it on will cause flame flare-ups that can give your steak an unpleasant burnt flavor. Don't worry, trimming it off won't result in lost flavor!
  • T-Bones vs. Porterhouses: People often confuse these two cuts, which is understandable because both cuts come from the loin (behind the ribs of the cow) and both have a T-shaped bone with meat on both sides. But porterhouses are larger and actually have more of the tenderloin than the T-bone. The U.S. Department of Agriculture's Institutional Meat Purchase Specifications say the tenderloin of a porterhouse must be at least 1 1/4 inches thick at its widest, while that of a T-bone must be at least 1/2-inch.

Ultimately, I chose to use ribeye steak for its flavor, size, and the lack of bone -- I wanted to slice and serve this steak family-style, and the fact that it doesn't have a bone makes that easier.

The ribeyes I used to test this recipe were 1 1/2 inches thick and weighed in at a whopping 1 1/4 pounds each. Because this cut has extensive fat marbling, it stays tender and tastes great after grilling. A steak this size is also ideal for serving two people, which means less meat to manage on the grill at one time.

I chose to use a thick cut because of its forgiving nature for a newbie at the grill—it’s pretty easy to overcook a 1-inch steak, but adding just a half inch can give you some extra leeway when you're first mastering the technique.

This being said, a big bone-in steak is an impressive sight and beautiful on a plate. Bone in or bone removed, it's up to you!

Grilled Fish Street Tacos

These grilled fish tacos take no time at all to whip up. You can even make everything you need on your grill. We used a cast-iron skillet on the grill to cook the fish and you can also make the red cabbage and corn in a skillet as well so there’s no need to be cooking both indoors and outdoors.

What to pair with grilled fish in tacos

  • Lettuce, tomato, cheese, and onion

  • If you want to get a little crazy, a staple in California is a California burrito (Carne Asada and fries). This burrito is often made with fish too. Make it taco-style, the kids will love it.

  • Salmon
  • Halibut
  • Mahi-mahi

What I love about these tacos is you can grill the slaw and fish at the same time and have a healthy meal ready to eat in about 10-minutes (20-minutes with prep time).

About street tacos

Street tacos use the smallest corn tortillas and are normally made with ground beef, pork, or chicken. They are meant to be more of a snack than a full meal, however, we find that most Mexican restaurants that we go to will serve three as a meal with assorted sides such as chips, refried beans, or rice.

They are small, quick and easy to put together, and very tasty. My son always chooses chicken street tacos when we eat out at Mexican restaurants. However, that’s not to say you can’t use fish, it might not be traditional, but it is healthy, and delicious.


Six Tips For Grilled Carrots

1. What Size Carrots To Use For Grilling:

This recipe works best with medium carrots. Two of the times I tested this I used smaller (organic) bagged grocery store carrots. I call them medium. They were about 3/4 of an inch in diameter at the widest spot. Some smaller some larger. This recipe, the amount of oil and the timing is optimized for carrots of that approximate size. Save your big wide carrots for another use, such as Carrot Ginger Soup or Moroccan Carrots.

2. If You Want To Grill Smaller Carrots:

If you can get really lovely small carrots, by all means use them. Just weigh out 2 pounds (without the greens.) You&rsquoll also want to turn the carrots perpendicular to the grill grates so they don&rsquot fall through!

3. Remove Greens and Peel the Carrots:

Remove the greens from your carrots when you bring them home. Read more about why and what to do with the greens here in the Ultimate Guide To Carrots. If you&rsquove read my tutorial on Chicken Stock, then you know that the peel of the carrots are bitter, so you&rsquoll want to remove the peels. I use these peelers. They&rsquore cheap and so sharp!

4. Oil the Carrots:

Before grilling, take a moment to coat the carrots in oil. This will really help develop the charring while grilling over direct heat. One tablespoon oil olive oil is plenty for medium carrots, but note that if you use smaller carrots, you will need a touch more oil in step 2. The reason is that there is more surface area (per pound) so you need more oil to coat them. Add up to two extra teaspoons of oil to make sure they are nicely coated with the oil.

5. They Won&rsquot All Be Done At The Same Time

Because there will be a range of sizes of your carrots, you&rsquoll want to make sure to pull the smallest ones off first and the largest ones off last. This is normal and why I have a range of cooking times (from 24 to 30 minutes total.) Note, you&rsquoll want to use long tongs for this recipe. They are hard to move around with a spatula. These are the tongs I have used since culinary school. They are the best and totally affordable!

6. Add Flavor Once They Are Done

Once the carrots are grilled, top with flavorful ingredients. Today I used North African flavors: harissa paste, lemon and olive oil with fresh mint. But you could also use home made pesto thinned out with a little extra oil and lemon if you don&rsquot want extra spice. Or you could go in another direction all together and drizzle on salad dressing. I think this creamy cumin seed yogurt dressing and chopped fresh oregano would be lovely!
