Figs with Bacon and Chile


This figs recipe is sweet, salty, sticky, and acidic—everything you want in a one-bite appetizer.

Ingredients

  • 5 ounces slab bacon, sliced ½ inch thick, then sliced crosswise into ½-inch pieces
  • 3 tablespoons pure maple syrup
  • 8 ripe fresh figs, halved lengthwise
  • 2 tablespoons sherry vinegar or red wine vinegar
  • ½ teaspoon crushed red pepper flakes, finely chopped

Recipe Preparation

  • Cook bacon pieces in a large nonstick skillet over medium-low, stirring often, until brown and crisp, 8–10 minutes. Using a slotted spoon, transfer bacon to a small bowl.

  • Pour off all but 2 Tbsp. fat from skillet; save for another use. Add maple syrup to skillet, swirling to combine, and heat over medium-high. Arrange figs in skillet in a single layer, cut side down. Cook, swirling liquid occasionally, until figs are slightly softened and caramelized, about 5 minutes.

  • Arrange figs cut side up on a platter and press pieces of bacon onto the surface of each fig.

  • Set the skillet over medium heat, add vinegar, and stir into juices. Bring to a simmer and cook, stirring constantly, until syrupy, about 1 minute. Drizzle syrup over figs, then sprinkle with red pepper.

Caramelized figs with yogurt (and bacon!)

It’s fig season! Today’s recipe is for a delicious and simple breakfast (or really anytime) treat – caramelized figs with yogurt (oh, and crispy bacon thrown in, for good measure).

For me, figs are the first sign that fall is upon us. The Turkish version — fat, plump orbs — start showing up at the open-air market on Church Street, near my house around late September/early October. I buy big paper sacks of them and nestle them carefully at the top of my market haul. Squished figs = unhappiness.

I found this recipe on Bon Appetit not too long ago and thought I’d give my figs the same treatment, minus the chile and plus some cool dollops of yogurt. It’s not that I don’t love spicy and sweet it’s that it was morning, I was hungry, and bacon and figs sounded yum as a start to my day.

Usually I’ve caramelized figs in the oven, but this skillet version makes the figs cook more quickly. Plus, you can control the rate and evenness with which the figs cook, making for a glossy finish on each cut surface. Pressing the crisp strips of bacon into each meaty fig is also weirdly satisfying, like sorting M&Ms by color.

In this salad, I grilled the figs in a cast iron skillet to add a caramelized layer of sweetness which also brings out their almost cinnamon-like scent. When to buy fresh figs?

Although they are in season for part of the summer and even into the early fall (August through early October), you can find them all year round in their dried form. When eaten fresh, there is nothing like the crunchiness of the seeds against that slight chewiness of the skin that should be enjoyed.

This is the time of year to enjoy fresh fig recipes. I’ve always loved figs but didn’t have fresh figs until I was very much an adult. During my years living overseas, we had a massive fig tree that would become ladened with figs. Fairly often, you would find me climbing up that tree just to grab enough figs to make various recipes, including jams, baked treats, and in salads.


If I can’t find fresh figs, what can I substitute them for?

This salad, albeit all about grilled figs, can also be made with other stone fruits such as peaches, nectarines, or plums. Of course, grilled pears would also be gorgeous in this salad. Want to make it more of a meal? Add chicken or some lentils to make it more satisfying.


Either way, it’s a simple and easy to prepare a salad that tastes amazing.

I decided to try my hand at creating a bacon brownies recipe. Because bacon and chocolate are two of the best foods in the world. So obviously together they would be a superfood dessert that would rule all other desserts with their smoky meets salty meets sugary meets meaty combination.

I shared these bacon brownies with my coworkers who all thought I was crazy.

They got mixed reviews. Some thought they were delicious others thought they were weird and too out there.

Personally, I still can’t tell if I find this bacon brownie recipe delicious or disgusting. The frosting was kind of melty and that made it really messy. If you have leftover fig mixture, you can use it in other dishes:

Slow Cooker Short Ribs

Ingredients:

  • 6/7 lbs. Boneless Beef Short Ribs
  • 4 Tbsp Olive Oil
  • 1 ½ Lg Onion, Quartered & Sliced
  • 1 ½ lg Carrot, Peeled & Diced
  • 5 Ribs Celery (Sliced)
  • 2 C Dry Red Wine
  • 2 C Chicken Broth
  • 2 Bay Leaf
  • 2 Sprig Rosemary
  • Salt & Pepper
  • Slow Cooker/Crock Pot
  • 2 C Whole Milk
  • 1 C Chicken Broth
  • 1 C Water
  • 1 tsp Salt
  • 1 C Uncooked, Old-Fashioned Grits
  • 2 C Sharp Cheddar
  • 1 C Parm, Grated
  • Chives for Garnish
  • Salt & Pepper to Taste

For the Henry Baines Sauce:

  • 1 (17-oz) Jar Major Grey&rsquos Chutney
  • 4 ½ oz Store-Bought Pickled Walnuts (Optional)
  • 1 (14 oz) Bottle Ketchup
  • 1 (10 oz) Bottle Steak Sauce
  • 1(10 oz) Bottle Worcestershire Sauce
  • 1(12 oz) Bottle Tomato Based Chili Sauce
  • 1 Dash Hot Pepper Sauce, or to Taste

Directions:

  1. In large skillet, heat the oil over med/high heat. Season ribs with salt & pepper.
  2. Sear the ribs in hot oil, turning to brown all sides.
  3. Transfer ribs to slow cooker/crock pot.
  4. Add the onion, carrot & celery to the same pan that you seared the short ribs in and cook, stirring frequently until onions are wilted and slightly brown.
  5. Transfer the vegetables to the slow cooker.
  6. Using the same pan as the veggies, add the red wine/chicken broth and bring to a boil.
  7. Boil for about 9 minutes or until reduced by ½.
  8. Pour red wine liquid over the ribs into the slow cooker, add bay leaf & rosemary.
  9. Cover and cook on LOW heat for 8-9 hours or until tender.
  1. Combine milk, broth and water in a large saucepan bring to boil.
  2. Add salt whisk in Grits and reduce heat to low.
  3. Cook, stirring frequently until creamy for 15-20 min.
  4. Once finished, stir in cheese until melted garnish with chives.
  1. Mix the chutney, pickled walnuts, if using, ketchup, steak sauce, Worcestershire sauce, chili sauce and hot pepper sauce in a large bowl.
  2. Transfer to an airtight container and refrigerate until ready to use or for up to 2 weeks.
  3. Serve at room temperature.

Mediterranean Cooking in Alaska

It’s nearly August and the peas are just coming into bloom. Usually, we’d've been eating them for weeks, but this year the weather has been unseasonably cold and rainy. The local newspaper is referring to it as “the so-called summer of 󈥨.”

Blame it on La Niña. When the ocean off Peru is 2 to 4 degrees lower than normal, as it has been this year, the “La Niña” weather pattern brings cool weather to Alaska.

Most food sold here comes from “outside,” the Alaska word for the world beyond our state. Walking through supermarket produce sections, full to the gunnels with summer fruits and vegetables, it’s clear that outsiders are enjoying summer weather.

Last week Costco had pallet-loads of fresh fruit from California, including the first figs of the season to arrive in Alaska. I’m a sucker for figs, and these were in perfect condition.

We ate them plain, stuffed with cheese, and wrapped in prosciutto. But with the final six figs, in honor of our “so-called summer,” I wanted to make something warming.

Time to pull out one of the recipes on my “must try someday” list: Sausages and Lentils with Spiced Figs from Diana Henry’s book Crazy Water, Pickled Lemons.

The combination of sausages, lentils, and spiced figs was wonderful. Even my husband, who typically doesn’t like fruit and meat together, thought the figs added terrific flavor to the dish. It was one of those meals where I actively enjoyed every bite.

The recipe made more figs than we could eat in one meal. The leftovers were a fortuitous kitchen bonus that I used to make Crostini with Gorgonzola and Spiced Figs.

The piquant flavor of blue cheese blended seamlessly with the spiced figs. It was so good I want always to keep a jar of spiced figs in the refrigerator for quick and easy last-minute appetizers. Each bite was a flavor revelation.

Sausages and Lentils with Spiced Figs
Serves 4
Adapted from Crazy Water, Pickled Lemons: Enchanting Dishes from the Middle East, Mediterranean and North Africa by Diana Henry (Mitchell Beazley 2002)
Spiced figs enhance the flavors of earthy lentils and succulent sausage. Be sure to serve the figs in a bowl on the side, so diners can eat as many or as few as they like. Although I modified Diana’s sausage and lentil recipe for our palates (the below recipe is as modified), I followed her directions for the spiced figs. They were delicious, though next time I’ll simplify the recipe by using equal quantities of red and balsamic vinegars sherry vinegar’s flavor is lost in the mix. Not all figs need to be peeled I peel only when the fig skins are beat-up or unusually thick.

Spiced Figs:
12 – 15 fresh figs
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup sherry vinegar
1/2 cup sugar
1 cinnamon stick

Sausages and Lentils:
3 pieces thick-cut bacon
4 bratwurst or other fresh pork sausages
2 cups diced onions (1/2” dice)
1/2 cup diced carrots (1/4” dice)
Salt
Freshly ground black pepper
1 cup small lentils, such as Puy or beluga
1 Tbsp. minced fresh garlic
1 Tbsp. minced fresh rosemary
1 cup white wine
3 - 4 cups chicken stock

Make the Spiced Figs: Peel the figs, if necessary, and cut them in half. Mix the vinegars, sugar, and cinnamon stick in a saucepan and bring to a boil. Turn the heat to medium-low and simmer for 5 minutes. Add the figs, cut side down and simmer for 5 minutes. Turn off the heat, turn the figs over, and let them cool in the saucepan.

Make the Sausages and Lentils: Cut the bacon into thin, cross-cut strips. In a large pot, cook the bacon until it’s crispy. Remove the bacon pieces with a slotted spoon and let drain on paper towels. Brown the sausages on all sides (there’s no need to cook them through) and remove to a plate.

In the same pan, sauté the onions and carrots, lightly seasoned with salt and freshly ground black pepper, in the bacon fat, being sure to scrape up any browned bits from the bottom of the pan. When the onions soften and start to turn golden, stir in the lentils, garlic, and rosemary and cook for 1 minute. Add the wine, 3 cups chicken stock, bacon, sausages, salt and freshly ground black pepper, and bring to a boil. Turn down the heat to medium-low and simmer for 30 – 45 minutes or until the lentils are tender but not mushy. If the lentils dry out as they cook, add the remaining stock. When the lentils are done, taste and add salt or freshly ground black pepper, as needed.

Serve immediately with the spiced figs in a bowl on the side.

Crostini with Gorgonzola and Spiced Figs
If you keep spiced figs as a refrigerator staple, this appetizer can be quickly put together for 2 or 20.

Thinly sliced artisan-style bread
Gorgonzola or other blue cheese
Spiced figs (see above recipe)

Lightly toast the bread and cut into 2" pieces. Spread it with gorgonzola. Top with a piece of spiced fig.
