Triple-Chocolate Cake with Chocolate-Peppermint Filling


Ingredients

Filling

  • 8 ounces imported milk chocolate (such as Lindt), finely chopped
  • 1 tablespoon light corn syrup
  • 1/2 teaspoon peppermint extract

Cake

  • 1 cup sifted all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 1/3 cup (packed) dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups miniature semisweet chocolate chips

Chocolate Glaze

  • 8 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1 tablespoon light corn syrup
  • 3/4 teaspoon peppermint extract
  • 12 whole red-and-white-striped hard peppermint candies, chopped

Recipe Preparation

Filling

  • Place chocolate in medium bowl. Bring cream and corn syrup to simmer in small saucepan. Pour hot mixture over chocolate; add extract and let stand 1 minute. Whisk until mixture is smooth. Let filling stand at room temperature while cake is baking and cooling.

Cake

  • Position rack in lowest third of oven and preheat to 350°F. Butter 9-inch-diameter cake pan with 2-inch-high sides. Line bottom with parchment paper. Butter parchment. Dust pan with flour. Whisk first 5 ingredients in medium bowl to blend. Using electric mixer, beat butter in large bowl until light and fluffy. Gradually beat in both sugars, then vanilla. Add eggs 1 at a time, beating well after each addition. Beat in dry ingredients alternately with buttermilk in 2 additions each. Mix in chocolate chips.

  • Transfer batter to prepared pan. Bake cake until tester inserted into center comes out clean, about 1 hour 5 minutes. Cool cake in pan on rack 5 minutes. Turn out cake onto rack. Peel off parchment. Cool completely.

  • Using electric mixer, beat filling until fluffy and lightened in color, about 30 seconds. Using serrated knife, cut cake horizontally in half. Place 1 layer, cut side up, on rack set over baking sheet. Spread filling over. Top with second layer, cut side down. Chill filled cake 20 minutes.

Meanwhile, prepare glaze

  • Stir chocolate, butter, and corn syrup in heavy small saucepan over low heat until melted and smooth. Mix in extract. Cool glaze until just lukewarm but still pourable, stirring occasionally, about 20 minutes.

  • Pour 1/2 cup glaze over center of cake. Spread over top and sides of cake. Chill until glaze sets, about 15 minutes. Pour remaining glaze over center of cake, then spread quickly over top and sides. Chill until glaze sets, about 1 hour. DO AHEAD Can be made 1 day ahead. Cover with cake dome; chill. Before continuing, let stand at room temperature until softened, about 4 hours.

  • Sprinkle candies around top edge of cake. Garnish with fresh mint leaves.

Chocolate and peppermint is one of my favorite flavor combinations, and this Chocolate Peppermint Bundt Cake is sure to be the highlight of any Christmas feast!

I love recipes that are elegant but easy, like this divine chocolate cake. It starts with a boxed cake mix, and with a few simple additions, the finished product is impressive and delicious.

It seems that the size of boxed cake mixes is always changing (generally, the box mixes tend to get smaller over time), but don’t worry, this recipe should work just fine regardless of the exact size of your cake mix.

I usually opt for a dark chocolate or fudge cake mix, but regular chocolate, or even Devil’s Food will work just fine. It’s really all of the tasty additions that make the cake.

Especially the decadent chocolate ganache drizzle! I mean, that’s a dessert in and of itself. At least, I’d happily eat it with a spoon.

This recipe is a holiday version of one of the most popular bundt cakes on my site. With the pudding mix and sour cream, this cake always turns out moist, with tons of chocolate flavor.

And no one needs to know how easy it is to make! It tastes even better made a day ahead. Just don’t put it in the refrigerator, as that tends to dry out most cakes.

If you do make this cake ahead of time, I recommend adding the ganache and crushed peppermint topping just before serving. Otherwise the peppermint gets a little soft and chewy.

I also find that Baker’s Joy cooking spray is the best way to ensure my bundt cakes come out of the pan easily. I always apply a generous coating to my bundt pan.

Chocolate Peppermint Cake Recipe From Box Mix Recipe

Adding Peppermint Extract to Chocolate Cake Mix

I used a Devil&rsquos Food boxed cake mix, a box of chocolate pudding, mayo, eggs peppermint extract and peppermint baking chips. (You can use white chocolate if you prefer a less peppermint-flavored cake)

Mix all the ingredients, except the baking chips with a mixer per the directions on the box.

When it is evenly mixed, add the baking chips and stir into the batter until evenly spread throughout.

Chocolate Peppermint Bundt Cake Recipe

Put your batter into a greased and floured bundt pan and cook per the box directions, checking about 10 minutes early.

Glaze for a Peppermint Cake

Once it is cooled, you can add a powdered sugar glaze as well as a sprinkling of more peppermint baking chips. This cake is so moist and will be perfect for friends and family visiting.

Description

These triple chocolate peppermint macarons are as adorable as they are delicious. Dunked or drizzled in melted chocolate and sprinkled with crushed candy canes, these festive cookies are the perfect holiday treat!

Ingredients

FOR MACARONS

100 grams finely ground almond flour

100 grams confectioner’s sugar

10 grams ( 2 TBSP ) Dutch process unsweetened cocoa powder

100 grams egg whites, room temperature (from about 3 large eggs)

105 grams granulated sugar

brown gel food coloring if desired (will make the macarons darker)

FOR CHOCOLATE PEPPERMINT BUTTERCREAM

3/4 cup (1 1/2 sticks) unsalted butter, room temperature

2 1/2 cups confectioner’s sugar, sifted

2 TBSP Dutch process cocoa powder

1/4 tsp peppermint extract

2 – 3 TBSP heavy cream or whole milk

1/4 tsp peppermint extract (or sub vanilla extract for less peppermint flavor)

YOU WILL ALSO NEED:

1/4 cup semi-sweet chocolate chips, melted

crushed peppermint candy canes

Instructions

FOR MACARONS

Line two baking sheets with non stick silpat mats with macaron templates. Alternatively, line with parchment paper traced with 1 1/2 inch circles spaced 2 inches apart. Set aside.

Into a large bowl, sift together the almond flour, confectioner’s sugar, and cocoa powder through a fine mesh sieve four times. Discard any large pieces of almond that do not sift through the sieve.

In the bowl of a stand mixer, mix the egg whites on medium high speed until light an foamy, about 1 minute. Slowly add the granulated sugar, 1 tablespoon at a time, while continuing to whisk on medium high. Wait 10-15 seconds between each addition to be sure sugar is incorporated.

After all of the sugar has been added, continue to beat the eggs whites on medium high speed until stiff peaks form. If adding gel food coloring, do so just before mixing is complete so as not to over mix the egg whites. The egg whites should be thick and fluffy and hold their shape when the whisk is turned upright. Continue mixing if the peaks fall over. Be careful not to over mix.

Once the meringue is ready, add 1/2 of the sifted almond flour and sugar mixture to the egg whites and use a spatula to fold together. Do not “stir” the mixture but rather “fold” the ingredients together using broad, sweeping motions. Scrape from the bottom of the bowl and up and over the top of the mixture. Before incorporating fully, add the other 1/2 of the dry ingredients and continue the folding motion. Pause to press the batter firmly against the sides of the bowl every now and then to smooth the batter. Continue folding until the batter begins to flow like lava and you can lift the spatula making a figure 8 without the mixture breaking off. If it falls off, continue mixing for three or four folds at a time. Test again. The mixture is ready when the ribbon of batter melts back into itself in about 10 seconds. Do not over mix as your batter will become runny and the macarons will not bake properly.

Scoop the batter into a pasty bag fitted with a 1/2 inch plain piping tip. Or use a thick ziploc bag fitted with the tip. Pipe the macaron batter onto the prepared templates. Circles should measure about 1 1/4 – 1 1/2 inches. When piping, hold the tip perpendicular to the silpat mat and apply pressure to the top of the piping bag to keep a continuous flow of batter through the tip. Release the pressure and use a small flick of the hand to end the flow of batter and leave a smooth top on the macaron.

Repeat with remaining macarons. Tap each cookie sheet firmly on the countertop three times to release air bubbles.

Preheat oven to 325 degrees.

Allow the macarons to rest at room temperature for 30-60 minutes or until the tops of the cookies are dry to the touch. Depending on the weather, this can take over an hour. Do not skip this step or the macarons will not bake properly.

Once dry, place a single sheet of macarons in the lower center rack of the preheated oven and bake for 13-15 minutes. Bake one sheet at a time and rotate half way through the baking time. The macarons are done when the tops are firm and remain attached to the “feet” when touched.

Cool completely on the silicon mats for 6-8 minutes before carefully removing the macarons.

Set aside while you assemble the filling.

FOR PEPPERMINT BUTTERCREAM

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium high speed until light and fluffy. About 4 minutes. In a separate bowl, sift together the confectioner’s sugar and cocoa powder. Add the confectioner’s sugar and cocoa powder slowly to the creamed butter, continuing to mix on low speed at first until the sugar is incorporated. Increase the speed to high and mix for one minute.

Add the salt, peppermint extract and 1 tablespoon of the heavy cream or milk. Mix on medium speed until combined and then increase to high speed. Mix for 2 minutes.

If buttercream is too thick, add more heavy cream one tablespoon at a time. If too thin, add more confectioners sugar. The buttercream should be on the thick side so that it holds its form when piped onto the macarons.

Transfer the buttercream to a piping bag fitted with a large star tip. To assemble the macarons, pipe the buttercream in a circle onto the flat side of a macaron. Top with a second macaron and gently press together just slightly to join the cookies to the buttercream.

Drizzle tops with melted chocolate and sprinkle with crushed candy canes.


Chocolate Peppermint Lasagna

I am still on a high from my week long vacation in Colorado! We had such an amazing time- more so than usual I think. The week was pretty stress-free, we snowboarded every day and relaxed at night. We ate out, a lot, because we were just too tired to cook when we got home. One night we decide to walk around downtown Breckenridge. We went to this awesome crepe house that was located on Main Street in Breckenridge. It was so cute and their menu was huge! Everything you could ever dream of in a sweet or savory crepe. I was trying to understand how they offered such a big menu in such a small place. They even had a fire pit outside so I could stay warm while I waited for my crepe- PUMPKIN PIE! It was the size of my face. It was filled with brown sugar and cinnamon, pumpkin pie filling, crushed graham cracker and whipped cream. I must recreate that! I captured this action shot while I was patiently waiting for my dessert!

Since I got back, I have been Baking baking baking and more baking. Welcome December! It&rsquos crazy there are only 23 days until Christmas! I am always so excited for the month of December but, I feel like it can&rsquot be here already. I haven&rsquot really gotten in the swing of buying presents or decorating- yet! So as action packed as the next few weeks are sure to be, I am giving you a quick, no-bake dessert that is sure to please a crowd. I actually brought this into work yesterday and my boss was literally eating it by the handful HAHA!

This is a Chocolate Peppermint Lasagna. It is layers of chocolate graham cracker, dark chocolate pudding and a peppermint cream cheese filling topped cool whip. The inspiration for this lasagna comes from my most popular recipe- Apple Pie Lasagna, which is the perfect fall treat and also my Pumpkin Pie Lasagna. So naturally, I needed to make a chocolate-peppermint version for the Christmas holiday! This can be thrown together in about 15 minutes and kept in the fridge until ready to serve. I prefer to make this ahead of time so that the graham crackers soften up a bit. It is easier to cut through and the consistency pairs better with the pudding and cream cheese layer. The peppermint cream cheese layer is like a cheesecake- it&rsquos so good! It is comprised of cream cheese, powdered sugar, cool whip and Andes Peppermint Chips.


How to make Chocolate Peppermint Cake Frosting

The frosting of our Chocolate Peppermint Cake Frosting is a sensational ganache. The French term “ganache” sounds fancy but it simply means chocolate melted into hot cream and it is SO easy! Here are a few tips:

  • Just like with the chocolate peppermint cake itself, you’ll want to use quality chocolate such as Guittard or Ghirardelli for the best tasting and melting results.
  • The chocolate does not have to be completely melted, but soft enough that it will whisk smoothly into the heavy cream.
  • Wait a full 20 minutes before beating so the ganache can thicken.
  • Beat the ganache for as long as it takes tot form soft peaks, 5-8 minutes.
  • Don’t over-beat or you’ll end up with grainy frosting – the ganache should end up with a pudding-like consistency that does not sag off your spatula.


Triple Chocolate Peppermint Tart

This triple chocolate peppermint tart has been on my baking to-do list all month. Or more like, really want to make list. I’ve been a little over zealous with all my baking this month I think. Eggnog Macarons, Baked White Chocolate Peppermint Donuts, and this Vegan Chocolate Peppermint Cheesecake to name a few.

It’s hard! I want to make it all immediately. But we can only eat so much sweet treats. I think that maybe I need to start planning ahead and making these treats before December. But that seems to take away from the magic of Christmas baking. At least it does for me. I look forward to baking all the peppermint treats I can all December. Maybe I am a little too rigid.

Anyway, I want to talk about this triple chocolate peppermint tart. This is one of the best tarts I think I have eaten in a long time. It is incredibly creamy. So creamy that you just want to savor every single bite. Seriously. The tart has just a hint of peppermint, not so much that it overpowers the chocolate. This tart is topped with a creamy, white chocolate frosting and sprinkles of crushed peppermint candies and peppermint bark. Oh, and we can’t forget about the chocolate graham cracker crust! Perfection, seriously.

his is actually quite easy to throw together. It’s just a matter of blending up the graham crackers with some butter and pressing into a tart pan. After that bakes and cools, you simmer some heavy creamy and pour over chopped chocolate. A little peppermint extract is whisked in to the creamy chocolate and it’s all poured into the the crust. The hardest part of all of this is, waiting for the tart to refrigerate to allow the chocolate to harden! A little creamy, white chocolate frosting is piped on the top for the finishing touches. The frosting is optional, but I think it’s definitely necessary. This would make an excellent holiday dessert for you and your family. Or a crowd-pleaser dessert for any holiday party you might still have to attend.

Preheat oven to 350 degrees. Butter and flour an 8-inch round cake pan line bottom with parchment or waxed paper. Whisk together flour, salt, and baking powder.

In a medium saucepan, bring 2 inches water to a boil. Place butter and chocolate in a large heatproof bowl set over (not in) water. Turn off heat let stand until melted, 8 to 10 minutes. Stir to combine. Remove bowl cool 5 minutes.

Whisk in sugar and vanilla, then eggs and buttermilk until combined. Fold in flour mixture until combined.

Pour batter into prepared pan. Bake until cake pulls away from sides and a toothpick inserted in center has a few moist crumbs clinging to it, 45 minutes to 1 hour. Cool in pan 5 minutes. Run a knife around edge of cake invert onto a wire rack (and leave inverted) to cool completely, about 1 hour.

Set cake on a serving platter. Tuck parchment or waxed paper under sides of cake. Pour chocolate icing onto center of cake and spread evenly over top and sides. Let set, about 40 minutes. Serve cake with whipped cream and chocolate shavings or peppermint candies, if desired.
