Cherry cake

Preparation cherry cake:

The pitted cherries are mixed with 5 tablespoons of sugar and left in the fridge for 1 hour, then we put them in a sieve and let them drain until we prepare the dough.

For the top, mix the yolks with the baking powder and leave them for 10 minutes. After 10 minutes we get a cream with small air bubbles. Add sugar and vanilla sugar and mix well. Lightly add the oil (as in mayonnaise), then the lemon peel, milk and flour.

Beat the egg whites with a pinch of salt and lemon juice. Then lightly incorporate them into the yolk cream. Stir carefully from top to bottom by inverting. Otherwise the countertop will not be fluffy. Mix the drained cherries with the semolina. In a 27 x 40 tray, put half of the top composition, the cherries and cover with the rest of the dough.

Bake in a hot oven at 170 degrees Celsius for 35-40 minutes.
