Baked carp with tomato sauce


  • 6 rounds of carp, about 2 kg
  • 300 ml canned tomato juice
  • 200 ml dry white wine

RECIPE PREPARATION Baked carp with tomato sauce:

Grind salt and pepper over fish and leave for about 15 minutes. Add the lemon juice and leave for another hour. Before putting the fish in the oven we must bring it to room temperature. Mix the oil with the wine, the tomato sauce, the crushed garlic, the chopped parsley, the broken bay leaves and the sliced ​​onion. Pour over the fish and put in the preheated oven. At the beginning we leave it at 200 ° and when it starts to boil we reduce it to 180 °. We always put a spoonful of tomato sauce over the fish so that it doesn't burn. The sauce should be about halfway through the fish. I made more sauce because it decreases and I run out of it, especially if the tray is stretched. I used 375 ml of wine and 500 ml of tomato juice. It lasts about 40-50 minutes. Serve with polenta and green parsley.


  • 1 kg fillets over (I used Alaska pollok but it goes very well with carp, crucian, trout)
  • 5-6 cloves of garlic
  • 5 large tomatoes
  • salt, pepper, thyme
  • 120 ml of olive oil
  • parsley for decoration

We cut the tomatoes and garlic into slices, we wash the fish fillets and dry them with kitchen paper. In a tray that goes in the oven we put baking paper and place a row of fish, garlic slices and a row of tomatoes, and fish, garlic and tomatoes until all the ingredients are done.

Sprinkle with salt, pepper, thyme and pour the olive oil over the entire surface.

Cover with aluminum foil and put in the preheated oven for about 25-30 minutes over medium heat. In the last 10 minutes take the foil and let the juice form.

Serve hot sprinkled with chopped parsley. Sport at work and good appetite!

Baked carp with tomatoes and ginger in wine sauce

What would you like to prepare when you buy from the fish market, a live carp, Salonta type? Well, there are many options, but this time I wanted to make the carp in the oven!

And if I still make it in the oven, I make it with tomato sauce anyway, but I add something more exotic from me: ginger (which I adore in terms of spice) and lemongrass!

Ingredients for 4 people:

  • 1 carp of 1,200 kg
  • 3-4 tablespoons of olive oil
  • 4 medium diced potatoes
  • 1 thinly sliced ​​lemon
  • 1 medium white onion cut into scales
  • 1 box of diced tomatoes in your own sauce
  • 1 box of whole champinon mushrooms
  • 1 strand of chopped lemongrass
  • 3-4 cm of sliced ​​ginger
  • 3-4 cloves of garlic, cut into thin slices
  • 100 ml of dry white wine
  • 200 ml of water (one cup)
  • 1 green salad
  • 1 tablespoon balsamic vinegar for salad
  • 1 tablespoon olive oil for salad
  • salt and pepper to taste

Preparation:
For starters, we clean the fish. I didn't have anything to clean, because I chose a Salonta carp, which didn't even have a scale on it. If you have chosen carp with scales, please epilate it from all scales.
We also eliminate the intestines. Wash the fish well in cold water, until you clean its inside well. We put it on a paper towel to wipe and remove the water from it.

Preheat the oven to 180ºC. In an oven tray, sprinkle with half the amount of olive oil, add the diced potatoes and finely chopped white onions.

We also prepare the other necessary ingredients: sliced ​​lemon, sliced ​​lemongrass (be sure to remove the larger part of the lemongrass and use only the soft part of it), sliced ​​ginger, sliced ​​tomatoes cubes and their sauce.

Over this bed of vegetables, we put the fish that we have cut from place to place in the meantime. In the notches we insert lemon, garlic and ginger. We do the same on the other side of the fish. We put the same spices inside the fish. Now we can sprinkle salt and pepper over both on the outside and inside.
Pour the rest of the olive oil over the fish and lightly grease it. The diced tomatoes from our can, we put them over the fish, we pour the tomato sauce in the tray. Add the mushrooms and a few sprigs of lemongrass. We also pour the wine and water into the tray.

Cover the tray with aluminum foil.
Put the tray in the oven and let it bake at 180ºC for 40 minutes.
After 40 minutes, remove the tray from the oven, remove the aluminum foil and put the carp back in the oven, at the same temperature, for another 15 minutes, to brown and catch a beautiful golden crust.

After it has browned well, remove the carp from the oven and let it rest for 5 minutes in a plate.

After that, we cut it.
The assembly on the plate is very simple: a healthy piece of fish, with potatoes, onions and mushrooms in the garnish, with tomato and wine sauce, in abundance!
Next, we can match the dish with a fresh green salad over which we sprinkled balsamic vinegar and olive oil and salt to taste!


We will clean the fish of scales and entrails, then wash and cut into pieces enough for a portion of one person.

In a bowl we will put the juice of 1/2 lemon, salt, pepper, 1 tablespoon of oil, crushed garlic and we will add the pieces of fish to soak for 20 minutes.

In a Teflon pan, heat the oil, then the pieces of carp fry it for a few minutes with white flour.

How the carp will fry, we will clean and wash the vegetables.

We will cut the potatoes into appropriate thick slices, onion scales, carrot slices, and bell peppers fideluta.

We prepare an embarrassing dish or a tray with higher walls, greased with oil in which we will put the vegetables seasoned with salt, pepper and sprinkled with oil, and on top the pieces of carp.

For a special taste, we will beat the sour cream in which we added the grated cheese, we poured it over the carp with vegetables to gratinate nicely.

We will cut the tomatoes into slices and put them on top.

Put the dish in the reheated oven at 190 degrees for 45-50 minutes (or if the vegetables have not penetrated, leave it in the oven for 1 hour).

It can be served hot after being taken out of the oven, garnished with lemon slices and finely chopped greens (parsley and dill).

Somehow it suited me to cook fish on a day of fish release. It's a coincidence that I don't really follow the Orthodox calendar. It would be really difficult to set our menu on religious grounds in our mixed family. Vukomir has the holidays in the old rite and I come from a Greek Catholic family. I rather let the appetite choose what to put on the table, and I certainly feel like eating fish at least once a week. Finally, today I had this sea perch in the oven for lunch, with tomato sauce with garlic. Compared to the recipes published earlier, the pan-fried sea bass with quinoa and that of sea ​​perch with parsnip puree, this way of preparation is much more accessible, more comfort food.

So not only is it delicious, but it's also easy to make perch in this way. In fact, the sea bass, also known and marketed under the names of sea wolf, sea bass, levrek or lavrak, is one of our favorite fish, so always a good new recipe with it goes well.

Baked carp in tomato sauce

One of the most popular ways to cook fish, but not necessarily the easiest. I have met many who have bought carp from the supermarket or from fishermen and who have complained that it is too greasy and they cannot cook it. First of all, if the fish weighs over 4-5 kg, my best advice is to grill it, so the fat will melt and become crispy. If it weighs less than 4-5 kg ​​then it goes fried in oil with corn and flour or in the oven with a little tomato sauce.

I had some sticks around 600 g, caught in one of my frequent fishing parties. They also have fat, but even if they are prepared in the oven, there is a little trick by which the fat can melt very easily. Put the fish in the oven in the pan only with spices without wine or something, so at first it will cook in its own juice until the fat melts and then add the wine or tomato juice. Baked carp with potatoes!

Method of preparation

All we have to do is marinate the fish a few hours before dinner or the night before. To do this, grease it with oil, then rub it well with a mixture of salt, freshly ground black pepper, dried rosemary and pepper flakes (or paprika).

An hour before dinner, place the fish in a pan greased with oil.
