'' Smart '' Cake

Melt the margarine and let it cool.

It separates the eggs; beat the egg whites with the vanilla sugar sachets, and rub the yolks together with the sugar.

Cold milk is mixed with flour. Put the rubbed yolks, the egg whites and the cooled margarine over it. Add the lemon juice and grated peel. Mix the whole composition well.

We use a high tray in which we put baking paper. We put the composition in the tray and put it in the oven, where we keep it for about 2 hours on a very low heat. With a toothpick we can check it when we take it out of the oven.

The cake is cut the next day and can be powdered with sugar.

Smart cake recipe

Ingredients for a large baking tray:

  • 10 eggs (preferably country)
  • 230 g butter (80% fat) melted and then cooled
  • 250 g flour
  • 1 liter of milk
  • 250 g powdered sugar (can also be cough) + a little more to powder at the end
  • the peel of a lemon
  • 2 sachets of vanilla sugar / a tablespoon of vanilla essence
  • a pinch of salt.

Method of preparation:

1. Preheat the oven to 160 degrees Celsius and cover the oven tray deeper with baking paper.

2. Separate the egg whites from the yolks, then beat the egg yolks with the powdered sugar. In the yolk composition you will gradually incorporate the butter, and then you will put the lemon peel given on the small grater. Continue with the milk, then with the flour, which you will add in the rain, little by little. The mixer will be set at low intensity to homogenize this composition.

3. In another large bowl, beat the egg whites with a blender. Don't forget to add a pinch of salt and vanilla sugar or vanilla essence to the egg white foam, depending on your preferences or what you have in the kitchen.

4. Gradually incorporate the egg white foam into the previously prepared composition, using a spatula and gentle bottom-up movements. It is very important not to mix excessively. Don't panic if it gives you the feeling that the composition has been cut because it is normal to look like that.

5. Transfer the composition obtained to the tray already prepared, covered with baking paper. Put the smart cake in the oven and bake for 50-60 minutes. If you think it is browning too much on the surface, you can set the temperature lower after the first 30 minutes. You can do the toothpick test to see if it is cooked. It is very important, however, that in the first 20 minutes you do not open the oven at all because the cake will leave and will not recover.

The cake will be left in the oven to cool gradually, it should not be removed as soon as it is ready. Once it has reached room temperature, you can refrigerate it for a few hours, then cut it nicely.

Before serving, you can decorate it with powdered sugar distributed using a sieve.

The smart cake is to everyone's taste, and this makes it an ideal dessert for family meals or parties as it will satisfy the sweet appetite of all guests at the table. What's more, it's also extremely easy to prepare and looks very sophisticated?

Smart Cake 2.0

Why & # 8220Cake smart 2.0 & # 8221? Because the recipe below is an improved version of an older recipe. What did I add? One of the essential ingredients: Rama Maestro margarine.

So maybe we shouldn't call it the "smart" cake, but the "smart" one! Why is our cake so smart? Because we put in the tray a very liquid composition and when we take it out of the oven, we have a cake in all respects, with top, cream and icing.

& # 8211 1 tablespoon vanilla sugar

Step 1. Preheat the oven to 140-150 degrees, respectively stage 1 of the oven and line a tray (28 x 18 x 5 cm) with baking paper. Margarina Rama is cut into cubes.

Step 2. Place cubes of margarine in a bain marie. For bain marie, put a pot of boiling water and on top of it another bowl in which we put Rama margarine and 4 tablespoons of milk.

Step 3. Add the caster sugar over the frame and melt them together.

Step 4. Separate the eggs. We whisk the egg whites.

Step 5. Mix the yolks with the vanilla sugar.

Step 6. Then add Rama margarine and sugar, melted and cooled. Mix well.

Step 7. Then incorporate, in turn, mixing well after each: cold milk & # 8230

Step 8. & # 8230buses beaten foam & # 8230

Step 9. & # 8230and the 9 tablespoons of flour & # 8230

Step 10. Put the composition in a tray greased and well lined with flour and put it in the oven for about 60-75 minutes, until it passes the toothpick test: a toothpick inserted in various parts of the cake comes out without a trace of composition.

Do not open the oven door for one hour, so that the cake grows evenly. Let the cake cool in the pan for a few hours or overnight and only then dust it with powdered sugar, portion it and serve it.

Today I managed to make the smart cake and I am very happy with how it came out. I had to keep it for 2 hours until it baked. I put the oven at 120ºC and the tray on top, and the bottom is not baked. but it's good. Maybe that's how it should be as I see in your pictures. I put a little powdered sugar on it when it was still hot and it melted.
