On the forum I had read the recipe for Marialuisa's strawberry tiramisu and I wanted to prepare it as a birthday cake. To make strawberry tiramisu more beautiful and special, I tried my hand at decorations, which, as you well know, I don't do very well, both because I don't have a lot of patience with these things, and because I don't have a lot of manual skills with decorations. Method

How to make strawberry tiramisu

Start preparing the syrup by blending the strawberries with the sugar. Add the water and the limoncello, put everything in a saucepan and boil for about ten minutes or until it thickens. Turn off and let cool.

Now start preparing the mascarpone cream: separate the yolks from the whites and whip the cream in a separate bowl.
Whip the egg yolks with the sugar, as soon as they are frothy, add the mascarpone.

Add the whipped egg whites and the previously whipped cream.

Gently mix the mascarpone cream with a wooden spoon and place it in the fridge.

In the cooled strawberry syrup, wet the ladyfingers and arrange them as a base in a springform pan. Trim about 25 ladyfingers to make them as high as the edge of the mold, lightly soak them in strawberry syrup on one side only and then arrange them in a palisade around the mold with the sweetened side facing outwards.

Pour a layer of mascarpone cream over the ladyfingers.
Cover the cream with the strawberries cut into wedges, leaving 1/3 aside for the final decoration of the strawberry tiramisu.

Cover with another layer of ladyfingers soaked in strawberry syrup.

Finish with a layer of mascarpone cream.


Decorate with strawberries that you have kept aside and refrigerate for at least 3 hours.

Remove the zipper from the mold and place your strawberry tiramisu on a serving plate and serve.

1. Wash the strawberries well, dry them, clean them from the stalk and reduce them into thin slices then, put about 200 grams of strawberries in a blender with water and 50 grams of sugar. Blend everything well until you get a liquid mixture similar to a fruit juice that you will pour into a bowl with a rather wide bottom.

2. Take two bowls: put the egg yolks in one and the egg whites in the other.

3. With an electric whisk, start whipping the egg whites until stiff. When they have reached a very soft and foamy consistency, put them to rest for a few minutes in the refrigerator.

4. Take the other bowl (where you will have just left your yolks) and with a whisk begin to work the yolks with the remaining sugar. As soon as the egg yolks are well blended with the sugar forming a velvety cream, add the mascarpone too, taking care to mix the mixture very well and trying to avoid lumps. I use, to make it first and to avoid the formation of lumps, the whisk just used to beat the egg whites.

5. Remove your whipped egg whites from the refrigerator and insert them into the mixture formed by the mascarpone, sugar and egg yolks.

6. Take the ladyfingers and lightly soak them in the juice you got from the strawberries, trying not to soak them too much (if, in fact, your biscuits are too soaked in the juice, the strawberry tiramisu, once finished, will be too liquid and will not have the right consistency).

7. Arrange a first layer of ladyfingers lightly soaked in strawberry juice in a baking dish.

8. Cover the first layer of biscuits with the egg, mascarpone and sugar mixture that you have prepared earlier.

9. Spread another layer of ladyfingers in your pan, then the mascarpone cream with strawberries and so on until you get to the edge of the pan.

For 6 people

  • 350 g of mascarpone
  • 2 eggs, separated
  • 1 box of pavesini
  • 4 baskets of strawberries + a few more for decoration
  • 2 tablespoons of brown sugar
  • 100 g of sugar
  • 2 glasses of orange juice

First, wash the strawberries well and dry them well. Pour the chopped strawberries into a glass bowl and macerate with the brown sugar and orange juice. Now whip the sugar with the 2 egg yolks with an electric mixer until you get a white cream. Then add the mascarpone and continue mixing until everything is well blended. Finally, whisk the egg whites until stiff and gently incorporate the mascarpone cream.
Drain the strawberries, put them in a bowl, quickly soak the pavesini in their maceration liquid and arrange them in a single layer in a rectangular baking dish. Spread a layer of cream on top that you will cover with the chopped strawberries, another layer of wet pavesini and finish with a last layer of cream and the remaining strawberries. Refrigerate for at least 2 hours and serve immediately, decorating to your liking with some strawberries.

How to Make Strawberry Tiramisu
  1. Beat the egg yolks in a bowl with half of the sugar with an electric mixer, until you get a frothy mixture.
  2. Combine the mascarpone and continue to mix from bottom to top, with a silicone spatula.
  3. Beat the egg whites until stiff with the remaining sugar and add them to the previous mixture, making it homogeneous.
  4. Blend the strawberries with the liqueur, until you get a liquid sauce in which you will dip the ladyfingers.
  5. In a square or rectangular pan (if you use Savoiardi) or round (if you prefer the sponge cake), place the first layer on the bottom and proceed to wet it with the strawberry sauce.
  6. Cover the base of ladyfingers or sponge cake with part of the cream and proceed alternating, until the last layer of cream.
  7. Decorate the Tiramisu with Strawberries, put it in the fridge for 2 or 3 hours and serve it fresh.
My tips
  • For a light version of the recipe, you can use vegetable soy cream instead of mascarpone.
  • The combination with Italian sparkling wine Classic Method will favor the balance between aromas and taste sensations.
