Thanksgiving Leftover Idea: Quick Roasted Turkey Posole


Don't toss those leftovers! Get creative, and turn leftover turkey into a Southwestern-inspired soup.

After everyone is done with the white meat for the sandwiches, what’s a cook to do with all the leftover bits? Soup is always the answer, and this Southwestern-inspired turkey posole is one to keep even after the holidays have passed. Hominy might be new to some, but the chewy bite of this thick corn kernel gives this soup more texture to hold up to the tangy broth. Feel free to mix and match your toppings. The ingredients indicated are only limited to your own posole dreams.

1 teaspoon olive oil
1/2 cup white onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
2 teaspoons dried cumin
1/2 teaspoon kosher salt
6 cups homemade turkey stock*
2 cups leftover roasted turkey breast, shredded
1 15-ounce can yellow hominy, drained
1 4-ounce can chopped green chiles, drained
1/4 cup freshly squeezed lime juice
Topping Ideas: 2 radishes, sliced 1/2 cup diced avocado 1/3 cup packed cilantro leaves (optional)
Garnish with lime wedges

1. In a large stock pot, cook onions in olive oil over medium heat until translucent.

2. Add garlic, oregano, cumin, and salt and cook until fragrant. Add stock, turkey, hominy and chiles. Cook for 20 minutes on high heat.

3. Turn heat to low. Stir in lime juice and serve with radishes, avocado, cilantro and lime wedges, if desired.

*For Turkey Stock: Fill a large stock pot with turkey bones, 1 halved onion (skins included), 4 whole garlic cloves (skins on), 1 teaspoon peppercorns, 1 carrot, roughly chopped, and 1 handful Italian parsley. Fill with water to cover. Simmer 6 hours, or until reduced. Discard solids and keep in fridge up to 2 weeks.

MAKES about 8 cups (serving size: 1 1/2 cups)


Leftover Turkey Soup

I love soup weather. As soon as it starts to get even a little chilly at night I want to make soup all week long. Our family loves Verde Pesole, it is a staple in our house. And Chicken Tortilla Soup also make a very regular appearance.

But this turkey noodle soup is something we look forward to every year. It is our go to use for the leftover turkey from Thanksgiving and Christmas.

If you are a fan of chicken noodle soup, you are going to love this too. It is such a great use of leftover turkey and you can load it with veggies to make it filling and good for you. Which after a holiday meal, you know is probably a good idea.

My mother-in-law has always made her Roasted Turkey for Thanksgiving in a Nesco Roaster. And as soon as dinner was over she would put the turkey carcass and water back in there, and make turkey broth. And the next day leftover turkey soup is always on the menu.

If you don’t want to use the turkey carcass to make your own broth, you can use chicken broth or if you can find turkey broth in the store you can use that as well. Trust me, after cooking a holiday meal all day, I am not always in the mood for more work. So there is no judgement for store bought broth!


Thanksgiving Leftovers — Here’s What To Do

Our favorite Thanksgiving leftover meal, aside from a great turkey sandwich piled with leftover roasted cranberries, is a turkey taco with turkey gravy transformed by red or green chile. Just stir some chile paste or powder into the gravy and heat it up. This alt-gravy is so good that outside of Thanksgiving time we roast turkey parts in the oven (and make turkey broth in the crock pot, see below) just for turkey tacos. Enchiladas can benefit from this red or green chile gravy adaptation as well.

Set up a turkey taco bar so everyone can combine their own taco fixings — meat, chile, avocado, cilantro, green onion, jalapeños, lime, and some corn tortillas charred on a stove burner for a few seconds.

Turkey Posole is Numero Dos on the Leftover List.

Turkey Posole–We’ve got a great cheater posole recipe in our book Cheater BBQ. Basic idea — throw together the leftover meat with chicken broth, hominy, onions, diced tomatoes, chili powder, and serve with taco toppings.

3 cups chopped cheater meat like pork shoulder, beef, chuck, or chicken

One 28 ounces can diced tomatoes

Two 14.5 ounce cans chicken broth

One 30 ounce can white or yellow hominy, drained

1 tablespoon chili powder

Crumbed fried corn tortillas

  1. Cook the onions in oil in a soup pot over medium heat until the onions are soft and lightly browned, about five minutes.
  2. Stir in the remaining ingredients and simmer about 30 minutes.
  3. Pass bowls of garnishes at the table for everyone to help themselves.

Let’s Round Out the Thanksgiving Leftovers List.

Turkey Nachos–You know what to do. Chips, meat, cheese, jalapeños, whatever you like.

Turkey Lettuce Wraps–Crossover Mexican toppings into Asian wraps. Wrap turkey, hot cooked rice, cilantro, jalapeños, green onion, and add a squeeze of mayo and Rooster sauce.

Dressing Cakes–Form the dressing into patties. Pan fry until crisp. Do the same with your mashed potatoes. Add an egg and a little flour to help them hold together. Great for brunch with fried eggs and the leftover cranberry salad.

Turkey Cranberry Salad–Fold together turkey chunks and your fresh cranberry salad (drain if necessary) with apple chunks and blend with mayo. Serve on a lettuce or a big crusty roll.

Turkey Sandwich Take Two–Turkey, cranberry relish, cream cheese, and lettuce on crusty bread.

Turkey Pie–Turkey, leftover gravy loosened with cream, leftover vegetables in a casserole or individual dishes. Top each with a crown of puff pastry from the freezer section.

Turkey Soup–Make a stock with the turkey carcass by simmering the bones with onion, celery, bay leave and parsley stems.

Here’s how we make delicious turkey broth in a crock pot. Go ahead and click on that link. You can come back and finish this post in a minute. Crock pot broth is yet another reason why the crock pot is such an efficient, economical, safe, great kitchen appliance. The crock pot is a true problem solver (even non- NASCAR models without the carrying case).

Cover and simmer a few hours, all day, or overnight. Just make sure there is plenty of water in the crock as it cooks down. Strain the solids and discard them, and allow the broth to cool before refrigerating or freezing. Now assemble your favorite soup with this rich homemade broth (a broth that you know exactly what it is made from). For traditional turkey noodle soup, add chopped turkey, carrots, and celery.

Cheater Chef tip: Cook the noodles separately and pour the broth over noodles in serving bowls. This keeps the noodles from getting soggy.


Recipe Summary

Place the turkey carcass in a large, deep pot, and add the stuffing, celery, carrots, onion, bay leaves, poultry seasoning, sage, and chicken broth. Pour in additional water if needed to cover. Bring to a boil over medium-high heat reduce heat to medium, and simmer for about 1 hour, skimming off any foam. Remove the carcass and any bones. Pick any meat off and return to the pot, discarding bones and skin.

Season to taste with garlic salt and pepper. Stir in the rice and return to a boil over medium-high heat. Lower heat to medium, and simmer 15 minutes. Stir in the peas, and continue to simmer until rice is tender, about 10 minutes more. Adjust seasonings to taste.


Possible Variations:

As I mentioned above, there are endless ways that you could customize this Thanksgiving casserole to your liking. So please feel free to experiment with the recipe and have fun with it! A few suggestions could be to…

  • Make it vegetarian: Just omit the meat completely, and feel free to add in some vegetarian sausage (I’m partial to Field Roast) and sautéed mushrooms in its place.
  • Add cheese: Feel free to sprinkle some shredded cheese (such as Parmesan, Monterrey Jack, Mozzarella) into this casserole if you would like to make it cheesy too.
  • Add corn (or creamed corn): In keeping with the tradition of Thanksgiving, some corn or creamed corn would also be a delicious addition to this casserole.
  • Add other veggies: Feel free to also add (or swap) in any other Thanksgiving-inspired veggies that you love, such as carrots, butternut squash, mushrooms, Brussels sprouts, etc.
  • Use mashed potatoes: If you happen to have leftover mashed potatoes on hand, you could choose to add them as a base layer to this casserole (and omit the sweet potatoes, if you would like), and then layer the rest of the ingredients on top.

Stuffed Boneless Turkey Breast is my favorite to serve for Thanksgiving dinner-for-two or for friends-giving when our different guests have different diet needs.. Few are vegetarians, some chicken-tarians, and others turkeytarians.. On such occasions, we cater to everyone by making a little bit of everything. a whole chicken roast, some veggie-forward main course, and a few stuffed turkey breast roasts.

This stuffed turkey breast recipe is worry-free, leftovers-free, and fits perfectly in our budget. Guests are happy because it tastes delicious and looks so good on dinner table. With gluten free stuffing. Even gluten-free guests are covered! No one misses whole turkey for sure. A complete win-win!

One stuffed turkey breast is good to serve 2-3 guests. Recipe doubles easily. You can make as many as you like.

So, let's prepare some moist perfectly roasted Stuffed Turkey!

Cooking a boneless turkey breast is very easy. The best cooking method is to simply marinate, stuff, roll, and bake. Baking it stuffed keeps turkey breast more moist compared to baking whole. If you remember our Whole Chicken Roast recipe of last week? For all poultry, the two sure ways of keeping meat moist is: marinate and temperature of roast. When turkey breast is cooked rolled with stuffing.. it has flavor and stuffing inside the roll to keep it moist and flavorful. Let me share this in detail:

Moist Stuffed Roasted Turkey Breast:

Marinade: I like to marinate pounded boneless turkey breast before roasting for full flavor and moist juicy roast. I pound it first because after mainating, pounding will not be easy. So please make sure to follow the steps in same order.

For this recipe, I used marinade of olive oil, lemon zest, minced garlic, with seasonings. Keeping breast coated in marinade for at-least 30-40 minutes to overnight works best. In this time, marinade softens the meat, fat from olive oil stays in meat when it is roasted making it moist and flavorful.

If you serving stuffed turkey breast for dinner tonight? I recommend marinating it for at-least 30 minutes.

While turkey absorbs the marinate, I prepare the stuffing and ready rest of the ingredients. Time management works out so well with first marinate then prepare stuffing and ready rest of the ingredients. It never feels like I'm waiting for marination. Note: You can also marinate turkey breast overnight.

Stuffing: A good stuffing also helps keep meat moist from inside. This is why I decided to use no bread crumbs or bread in this stuffing. Bread can absorb moisture leaving turkey dry where as veggies such as kale, softened onions, garlic, cheese will make delicious filling and moistune the meat from inside. Bonus is that recipe is gluten free.

Butter or Oil: Massaging the inside-out of bird with some oil and butter also helps in keeping meat moist. I like to mix herbs with room temperature salted butter and rub inside-out for herbaceous flavor and juicy seasoned turkey roast.

Remember, flavor and moist texture go hand-in-hand when cooking a boneless turkey breast or any bird. More flavor means more moist meat. So, always remember to marinade, and stuff with bold flavors for a delicious roast turkey breast.

Once turkey breast is marinated and massaged with herb butter. I then spread an even layer of stuffing with skin side down. I like to roll breast tight and tie with butcher twine so that stuffing stays inside. Tying also helps in keeping the breast in pin wheel shape when baking. Resulting roasted turkey is gorgeous looking always!

TIP: Never discard the skin of turkey breast. I like to reserve it. It does not fit whole roulade but I spread it top side of rolled turkey breast before tying with twine. Skin gets crispy while roasting. Looks beautiful. Tastes scrumptious!

How long to cook Stuffed Turkey Breast:

How long to cook stuffed turkey works hand-in-hand with what temperature it is cooked at.

1) You can either cook stuffed turkey breast for 60-70 minutes at 400 degree Fahrenheit oven temperature.

2) Or follow my technique of first cooking at 450 for 12 minutes. Then lower the temperature to 350 and continue cook for another 35-40 minutes until internal temperature of turkey breast reaches 165 degrees Fahrenheit. The initial high temperature helps crisping the skin and rendering fat. Remaining time at low helps with cooking the turkey breast fully while not drying the breast meat because temperature is not very harsh/high. Due to low temperature, it stays moist.

Festive Tuscan Kale Stuffing:

I must tell you about this stuffing which is important part of this turkey breast recipe. Other than the fact that it is gluten free. It is also very delicious, herbaceous, healthy, and loaded with flavor. This is a kind-a stuffing I love enjoying with spoon too. :)

1) I picked hearty green - Tuscan kale for color and texture. Kale won't melt like spinach. So I could use sharp cheese to compliment the refreshing flavors of olives, capers, and lemon zest.
2) Sharp cheddar cheese not just adds flavor but also binds the stuffing well. Stuffing won't fall apart when turkey is sliced to pin wheels. That being said, I have not used a lot of cheese because I not wanted to make color of stuffing yellow full of cheese. It is a festive roast. So colors are important.
3) For similar reason, I also added 1/4 cup of chopped beet root stems in stuffing. This is not a common ingredient and not required. You can skip or replace it with chopped rainbow chard stems, or dried cranberries.
4) I loaded the stuffing with fresh chopped parsley, sage, and oregano. These herbs pair very delicious with holiday roasted turkey and compliment the flavors of olives, and cheese.
A hint of chili flakes is my weakness. I have to have some heat. You can skip it if you like.


This stir-fry mango ginger chicken is delicious and refreshing, with mango added at the end of the cooking process and just heated through. 

This recipe involves "velveting" the chicken to keep it moist. Velveting, or waat, includes soaking the chicken in egg whites, corn starch, and rice wine, and then blanching it in water for about a minute prior to stir frying.

  1. For adobo
    • 4 dried guajillo chiles (2 ounces), wiped clean
    • 3 dried ancho chiles (1 1/2 ounces), wiped clean
    • 2 teaspoons cumin seeds
    • 1 (1/2-inch) piece cinnamon stick, smashed
    • 2 whole allspice
    • 1 clove
    • 4 garlic cloves, smashed
    • 1 1/2 teaspoons dried oregano
    • 1 1/2 teaspoons thyme leaves
    • 1/3 cup cider vinegar
    • 3 tablespoons water
    • 2 tablespoons vegetable oil
  2. For turkey and gravy:
    • 1 (12-to 14-pound) turkey, neck and giblets (excluding liver) reserved for turkey stock
    • 2 cups water, divided
    • 1 tablespoon vegetable oil
    • About 4 cups classic turkey stock , divided
    • 1/3 cup all-purpose flour
    • Melted unsalted butter if necessary

If you’re not aware already, let me just enlighten you to some secrets of “cooking”.

  1. You can combine pretty much any combination of meats, beans, vegetables, rice and/or pasta, spices and cheese and call it a casserole.
  2. 95% of these casseroles can be made ahead of time, frozen, and reheated.

Miraculous right? I like to get my casserole on when I go out of town, in the hopes that The Hubs won’t eat only frozen pizzas and beer while I’m gone.

Usually he ignores me and goes the pizza route anyway, but I’ll never stop trying.

This time around I was working with ground turkey, zucchini, leftover groats (unprocessed oatmeal) Kerrygold Aged Cheddar, canned diced tomatoes, and fresh basil.

Mix, mix, mix. Boom! A casserole is born. Prepared and ready to eat for The Hubs if he decides to partake in some actual nutrition while I’m busy digging taters.
