Meatball soup


So far I have posted more sweets. But I also prepare other dishes from time to time. The meatball soup is the only soup, apart from some soups, that my son eats for which I cook.

  • 1/2 kg minced meat mixture
  • 1-2 slices of beef broth
  • 2 pieces of onion suitable
  • 2 carrots
  • 1 small celery
  • 1 piece parsley root
  • 1 piece of parsnips
  • 3-4 tomatoes
  • 1 or
  • 3/4 l bran borscht or more, depending on how sour the borscht is.
  • green parsley, leustean
  • salt
  • pepper

RECIPE PREPARATION Meatball soup:

Because I like the taste of this soup when I also have 1-2 slices of beef broth, I take care of them first. I wash them well and put them to boil in a pot with 2l of water. I make sure to collect all the foam it leaves. Meanwhile, clean the vegetables and chop them into cubes, use only one onion. I add it to the pot with the brine slices and after 30 minutes I add the scalded, peeled and diced tomatoes. Let it boil for about 20 minutes after it boils and add the borscht that I boiled in the meantime. If necessary, I add some water that I boiled on it.

I have already prepared the minced meat. I added a finely chopped onion, seasoned with salt and pepper and mixed it with the lightly beaten egg with a fork. I make the meatballs and add them to the pot. When they start to rise to the surface it means that they have boiled. Now I adjust the taste of salt.

When the taste is what I want, I stop the fire, put the finely chopped parsley and dill and cover the pot with a lid. After leaving the soup for about 10 minutes, it's only good to serve! Welcome to the table!
